This is the last installment of Denver's Top Bartenders Uncovered, a Cocktail Week special series that acknowledges and celebrates the tenders of your favorite cocktail-mixing bars. The three featured here today - Joe Hines of Williams & Graham, Allison Anderson of Frasca, and Bryan Dayton of Oak at Fourteenth- come from different backgrounds and they are sure to make some of the best cocktails one can find. Just as their fellow bartenders in the two previous installments of this series, these three put up with Eater's prying and prodding on everything from their first bar jobs to trends they hate and the worst cocktails they have ever made.

Trends: Fat-Washed Spirits And Cocktails

spacer Fat-washed spirits are all the rage and their use in cocktails continues to increase. Depending on who you ask, they sound enticing or not so much, but say what you will, they are trending and Denver's bars jumped on that bandwagon.

Eater asked Scott McBride, the head barman at Strings about fat-washing. McBride said it's a pretty arduous process but one that bar programs in the big cities have been playing wwith it and one that is definitely showing up in Denver. To infuse a spirit with fat, McBride described, you mix the fat - bacon, turkey, beef fat, even butter - into the spirit and let it sit for several days. Then, you freeze the alcohol until solid, remove the separated fat off the top of the frozen block of booze, thaw the alcohol, and then strain. The result is a fat-infused spirit.

spacer True Food Kitchen, recently opened in Cherry Creek North, features a liquid hangover cure- the Hangover RX. The restaurant that prominently features a fresh juice bar combines coconut water with fresh pineapple juice and orange juice. Other options for fresh soothing drinks include the Kale Aid, a combo of kale, apple, celery, lemon and ginger, or the Medicine Man made with sea buckthorn, pomegranate, cranberry, black tea, and soda.

Anika Zappe, Beverage Director at Le Grand Bistro and Punch Bowl Social: Red beer with clamato, lime, chipotle Tabasco and smoked salt. Two please.

Sean Kenyon of the Squeaky Bean and Williams & Graham: Lots of water and Advil before bed. If that doesn't work... just wake up and keep drinking.

Allison Anderson of Frasca Food & Wine: a b12 tablet, eggs and american cheese on toast with hot sauce and a cold beer.
