September Cupcake of the Month: S’mores!

September's Cupcake of the Month were S'mores!

S'mores are one of my all-time favorite cupcakes because the crunch of the graham cracker is unusual - mostly cupcakes aren't "crunchy." Plus, I'm totally a sucker for chocolate (those people who don't like chocolate? They're not my friends, really).

We used Nabisco Original Grahams, because as Cooks Illustrated/America's Test Kitchen says, grahams made with molasses instead of honey taste better in a lot of recipes - honey grahams can be too sweet, plus some vegans don't eat honey. For our vegan version, we used vegan marshmallows from Nom Pod in Denver, but you can also buy Dandies in grocery stores like Whole Foods.

This is one of our most popular flavors, and it makes an awesome mini cupcake as well. See some older photos of this flavor on our Flickr page.
