    Grilled Herb Baby Lamb Chops

    I love to marinate and grill most of our spring time and summer meals. These lamb chops are so simple and satisfying. For a "Surf and Turf", (as pictured) I like to serve with grilled asparagus, baby greens salad and a piece of grilled salmon.

    • Servings: 4
    • Prep Time: 1 hour
    • Cook Time: 7 minutes
    • Total Time: 1 1/2 hr

    Ingredients:

    4 Baby Lamb Chops
    1 Tbsp Olive Oil
    2 Garlic Cloves, chopped
    1 Tbsp Fresh Rosemary, chopped
    1 Tbsp Tarragon or Herb/white Vinegar
    1 Tbsp Chopped Fresh Parley
    1 Tbsp Chopped Fresh Thyme
    ½ Lemon Juice, and zest
    1 tsp Sea Salt
    1 tsp Cracked Black Pepper

    Directions:

    Pulse all ingredients but the lamb chops in food processor or chopper and rub on both sides of chops. Marinate for 30 minutes to 1 hour in zip lock bag in refrigerator. (If yours are reg lamb chops wrap the bones in foil just before grilling.) Bring to room temp for 20 minutes. Grill on medium heat for 3 minutes on each side to 3 1/2 min each side. Serve over a bed of baby mixed greens or arugula tossed with lemon/olive oil vinaigrette and grilled asparagus.
