Glass pans absorb heat much more than shiny metal pans do, so you should keep this in mind when you are baking your cookies. If you want your cookies to turn out soft and chewy instead of crunchy and dark, you should keep a close eye on your cookies and take them out of the oven a little bit more quickly than you would if you were baking them on a cookie sheet. Another good idea is to drop the oven temperature by about 25 degrees. By doing so, you can help ensure that your cookies come out nice, soft and tasty instead of crunchy. Although it might take a batch or two in order to come up with the right baking time, you can surely turn on delicious batches of cookies, even if you have a glass pan.
