How to Use Glass Pans When Baking

There is a big difference between baking with a metal or glass dish. Glass takes longer to heat up than metal because it is an insulator, but once it is hot, glass stays at a more stable temperature. When using glass dishes for baking, compensate for the longer heating time by extending the baking time by five or ten minutes.

Metal pans are prone to getting hot spots, but glass pans cook far more evenly.

Glass pans and dishes are best for foods that bake at low temperatures for a relatively long time, like cakes.

Metal pans are best for items baked for short times at high temperatures, like biscuits, because they heat up and cool down fast. Keep in mind that metal pans with a dull finish abosrb heat faster than their shiny metal counterparts.
