“They’ll Think It’s Homemade” Vegan Chocolate Cake

Do you ever get home late on a holiday, a primarily dessert-centered holiday, and realize it’s too late to bake anything? I guess these things happen on, say, a Thursday too… But anyway, last night I found a solution! Needing a Valentine’s Day dessert in a hurry, I pulled out an Amy’s Chocolate Cake I had picked up at the grocery store for dessert emergencies (hey, those happen a more than you’d think), made a simple powdered sugar and non-dairy milk glaze, and sliced up the strawberries I had in the fridge.

Have you ever tried Amy’s Chocolate Cake? It’s fantastic! At least we really like them. They’re everything a chocolate cake should be, and I have to admit I like the smaller size of it because there isn’t a giant cake left sitting around, needing to be eaten before it’s sweet, moist chocolate cake-y goodness goes dry and stale. It’s not a “pretty” cake straight out of the package, but with a little plating, it has flavor, texture, and aesthetics on it’s side!

Oh, and there was “real food” too. But who really cares about real food on Valentine’s Day? Let’s be honest; it’s not a day about love as much as it is a day about dessert! Okay, okay, maybe that’s not true for everyone. I made a quick and simple penne with broccoli, cauliflower, eggplant, pepitas, garlic, and marinara. I love pastas loaded with veggies!

    Beautiful photos! I totally forgot that Amy’s made cakes now… I have to admit that I have never been tempted to buy them because I love baking so much – but now you make me think that perhaps I WILL have a “dessert emergency” & should have one of these on hand just in case. spacer

    That pasta dish looks good. I have not tried Amy’s cakes yet. The price is what makes me not buy them since I can make one for cheaper. It is good to know they are tasty if I ever do have a dessert emergency.

      Yeah, I did think how I could make it myself for much cheaper.. but that’s the price of “convenience” I suppose!

    Wow, for a simple pasta that bowl looks unbelievably good! That must be because of all the whole veggies in it spacer
