Green Bean Salad

This is a very simple, quick, and versatile side salad. You can make this salad with green beans only or you can experiment and add whatever other ingredients as well. How about some cooked or canned beans, some chopped bell peppers, etc.
The turmeric in this salad is optional. Today was the first time I added a pinch of it to this salad. Turmeric does not have a lot of flavour. It does however have many health benefits; therefore I try to incorporate it into my recipes whenever possible.
Ingredients
- canned green beans
- other veggies or legumes (optional), I used some cooked beans
- onion, chopped
- olive oil
- vinegar (such as raw unfiltered apple cider vinegar, a healthy choice)
- salt, pepper
- honey
- turmeric (optional; very healthy)
- fresh or dried, chopped herbs, such as parsley
Directions
Drain the canned green beans. Chop the beans in case they’re too long. Then put them in a bowl. Add other chopped veggies or legumes if desired.
In another bowl, combine some olive oil, vinegar with salt, pepper as well as the chopped onion. Mix in a little honey. If you use turmeric then add it to the bowl as well. Pour the dressing over the beans. Mix well. Taste and adjust seasoning to your liking.
Let the salad marinade in the refrigerator for about an hour before serving. Taste again and adjust the seasoning if necessary.
