Favorite Cookbooks

A bientot…

Over the past few months, a lot has changed for me. I’ve worked no less than about 3 jobs at a time, written countless recipes, and reconsidered every aspect of my connection to my work and my career. I have always loved letting ideas simmer along with the pots on the stove.

While I missed my blog and, certainly, the connection I have with all of you through our chatting, I also realized that I don’t necessarily identify with the format of The Wright Recipes anymore. When I first began writing The Wright Recipes, I was looking to cook the recipes I wanted, regardless of a paycheck, and connect with cooks who felt the same way. However, the even simpler version of that is that I like to cook, taste and engage with my food and other cooks– and recipes are only one of the many ways I do that. I bet that’s true for all of you, too.

So, when I leave for France tomorrow for the summer, I will be switching over to a new blog I’ll be writing called Spoonful of Cake, which will act more as my virtual cook’s notebook. On it, I’ll share with you my photo or written essays, doodles, scribblings on the backs of napkins or notes from a shoot I worked.  (And recipes, too.) I will keep The Wright Recipes up as a sort of cookbook in the hope that you’ll join me in revisiting the recipes and memories I made.

I truly loved cooking and eating the recipes I wrote here, so to honor them I turned my weekly “Dinner: $20 in 20 Minutes or Less” column into a fun cookbook/’zine. Check it out in the store on my new blog, as well as a few of my favorite independent bookstores in Brooklyn.

The first cookout of the season has happened already. I filled my plate with a juicy burger and chips, a familiar meal I eat every summer with minor adjustments: a different beer, perhaps, or a pickle from a jar I picked up at the farmer’s market. It’s a meal I’ve cooked and eaten a thousand times but tasted different in my best friend’s backyard, heady with the scent of sunscreen. It was a meal without a method or an ingredient list, and still turned out just like I remembered.

Rosewater Madeleines

There is something deeply pensive about madeleines, isn’t there? A correlation, of course, famously made to Proust, but there is something more to it than that for me. Perhaps it’s because I’m thinking of France these days, or because I’m hoping for a pace that might lull over tea time and a fragrant, delicate cake. These little gems are at once inherently festive and understated, and are the perfect recipe to send along to you on this ethereal spring morning, bursting with thought, hope and change.

What Gives?

… Is what you might be asking yourself. More specifically, you might be wondering why I haven’t posted in a very long time, especially because I’ve loved doing so every day for the last two years.

Well, in the past few months, my life has seen an immense amount of personal and professional shifts, some I will mention here and others I might tell you if we met over coffee. I’ve been in my kitchen every day working on recipes for magazines and cookbooks, meeting insane deadlines while I still work as an Associate Producer for a new show on the Cooking Channel called “Unique Sweets” (a sweet spin-off of the channel’s popular show “Unique Eats”).

I have hardly forgotten about you, though. I’ve been spending any free moment I have working on a cookbook that I plan to publish on my own and sell through my blog. I’ll keep you posted with more details soon, I promise!

As if my dance card wasn’t full enough, I am also moving back to Paris for the summer to write a book. It’s something I’ve wanted to do for years and now have the time on my hands to drop everything and go. If anyone wants to catch up over coffee, meet me in a café in the Marais where I plan to be staked out all summer.

I will definitely post as much as I can over the next few weeks as I finish up the show and my article deadlines, but it may not be in my standard recipe format– my refrigerator (and stomach) is too full these days with recipes I’m working on for other projects for me to take on anything else. In the meantime, check out my archives, shoot me emails, comment and let me know what you’re cooking: I’m still here, cooking and thinking of ways I can join you in the kitchen. I promise on the handle of my very favorite chef’s knife that we’ll be cooking together again soon.

Dinner: $20 in 20 Minutes or Less

Baked Tilapia with Browned Butter and Balsamic

Preheat oven to 350. Arrange four large pieces of foil on work surface; place each of 4 tilapia fillets (about 1 ½ lbs. total) on foil.  Dividing evenly, drizzle with 2 Tbsp. balsamic vinegar and 2 Tbsp. cold butter; season with salt and pepper. Crinkle and gather edges of foil to create packets; transfer packets to rimmed baking sheet.  Bake 12 to 15 minutes or until cooked through; serve with wilted greens.

Brown Sugar Oatmeal Pudding

I’ve sung the praises of a warm, homemade pudding before. Warm pudding that tastes of comforting breakfasts emerged from a cozy bed, or fresh, chewy cookies from the oven? Not until now. I made this pudding by steeping oats in warm milk and turning it into a sugary, velvety pudding (and transformed the otherwise discarded oats into a crunchy topping). It was just the comfort I was craving and didn’t even know it.

Dinner: $20 in 20 Minutes or Less

Endive Salad with Fennel and Grapefruit

Slice off root end of 2 endive and pull off in leaves; thinly slice 1 medium fennel bulb. Transfer endive and fennel to a medium bowl with 1/4 cup fennel fronds, segments from 1 grapefruit, ½ cup oil-cured olives (pitted) and ½ cup crumbled feta cheese. Toss with 2 Tbsp. fresh lemon juice and 3 Tbsp. olive oil; season with salt and pepper.

Roasted Marrow Bones

My friends are divided on the issue of marrow bones– I know people who love them and people who hate them. It’s true that for some, handling meat bones isn’t a favorite kitchen activity. For me, I see beyond that and remember eating marrow bones in Paris, a cherished ritual saved for bistros and very good baguettes. This past weekend I decided to beg my butcher for a pound or two of the marrow bones– that he handed to me free of charge, I might add– and get messy and nostalgic, all at once.

Dinner: $20 in 20 Minutes or Less

Orzo Risotto with Pancetta and Radicchio

Heat a medium saucepan over medium heat; add 4 oz. chopped pancetta. Cook until fat begins to render, about 2 minutes. Add 1 cup orzo and leaves from 1 sprig rosemary to pan; cook, stirring, until pancetta and orzo are golden, about 6 minutes. Add 1 cup hot chicken broth; quickly simmer over medium-high until the orzo is silky and the liquid has almost evaporated, about 5 minutes. Repeat with remaining 2 cups hot chicken broth, adding in 1 cup increments. Stir in 2 cups sliced radicchio and serve sprinkled with fresh rosemary.
