Recipe Redux: Pumpkin Apple Soup

Oh how I miss blogging and taking pics for this blog. This panda would like to have 48h days, or maybe this little vacation was just what I needed… My job requires lots of time and attention, its definitely fun and great for me since it makes me think about food all day. However, developing recipes and menus takes a toll on your blogging mojo which I’m trying to get back
I missed last month’s Recipe Redux, in case you’re not familiar with this challenge:
As the first and only recipe challenge founded by registered dietitians, The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. Dietitians Regan Jones, Serena Ball and Deanna Segrave-Daly founded the group on the belief that healthier eating should always taste delicious. As the Latin term “redux” means to revisit or reinvent, we are reinventing the idea of healthy eating with a taste-first approach. We aim to inspire the food lover in every healthy eater and inspire the healthy eater in every food lover.
October’s Theme is “Fresh from the Pumpkin Patch”. The challenge is to excite readers to try out fresh pumpkin, other than the traditional pie. I chose pumpkin apple soup and my fellow reduxers have some amazing recipes for you too so don’t miss the roundup at the end of this post!
Like a month ago someone tweeted a link for a free kindle download of the Gooseberry Patch Pumpkin Cookbooklet. I found this recipe there and adapted it to make it healthy and vegan
Pumpkin Apple Soup
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 onion, chopped
- 1 leek, chopped
- 1 apple, cored peeled and chopped
- 1 tablespoon curry powder
- 2 cups fresh pumpkin, chopped
- 4 cups vegetable broth
- 1/2 cup almond milk
- Salt and pepper
- Heat oil in a saucepan and cook garlic, leek, onion and apple until tender.
- Stir in curry powder and cook one minute, stirring constantly.
- Add pumpkin and vegetable broth.
- Bring to a boil, stirring occasionally. Reduce heart and simmer until pumpkin is tender.
- Puree mixture in a blender or food processor.
- Return to saucepan, stir in milk and heat through.
- Season with salt and pepper.

Yum! I Love the idea of pumpkin and apple together.
The apple slices as a garnish really works! I liked the taste of mashed up apples in the pumpkin soup I made, so I can only imagine that this tasted fantastic!
i am totally in a soup mood these days. i LOVE how u combined a natural sweetner like apple with the pumpkin! delishness . yes, i miss your blog posts. life is busy. ahhh. i have to struggle to find time and energy to blog too at least once a week, so hard. miss u. update me.

Delicious! I make a butternut squash soup with apple and think it’s a great combo, so I know this one is going to be good too!
