Conversation Hearts Cake Pops for Valentine’s Day
If you’ve visited my baking blog lately, you’ve probably noticed I’ve become a little obsessed with cake pops. Ever since the Wilton Pops book became available, I just haven’t been able to contain myself. The ideas are flowing I tell you! It also helps that I have some awesome cake pop testers in the house. My kids just can’t seem to get enough of these and I don’t mind treating them to one or two pops every now and then.
Seeing as I have Valentine’s Day on my mind already, my first idea focused on the candy that you probably think of most often for Valentine’s Day, conversation hearts. They’re simple, sweet and share little messages of love.
To make these extra special, I started with a red velvet cake and a little cream cheese frosting. Mmmm … perfection!
Once the frosting and cake crumbs are combined and chilled, you can use any type of heart shape mold or cookie cutter you like to create these. I just happened to have picked up Wilton’s Petite Heart Pan while shopping at Michael’s last week and knew it would be perfect for this project. Each little heart is perfectly sized for cake pops. After pressing the cake pop dough into the shapes and an overnight chill in the fridge, they were ready to be sticked <– yes, it’s a word and it’s mine. Sticked involves placing a lollipop stick in candy melt and “sticking” it into the cake pop.
After another short trip to the fridge, these beautiful red velvet cake pops are ready to be dipped in candy melts.
I’ve gotten quite a few questions on twitter about how to get the candy melts nice and smooth. The easy answer … I use the microwave on 50% power to melt the candy in a small glass dish until the wafers are almost melted … but not entirely. They hold onto heat and with some gentle stirring become nice and smooth. I then add a few tablespoons of pure vegetable oil to thin the candy a bit so that it slowly drips from my mixing spoon. Think the consistency of honey!
You just dip them straight down into the melts (only once, you don’t have to keep dunking them like a cookie in milk), then slowly pull it back out of the melts and gently tap the excess back off. While Wilton does make a cake pop stand, my experience using this has been completely unsuccessful. I recommend buying a small foam block from your local craft store. It can be used multiple times and holds the pops in place to dry quite well.

Quick question… how much frosting do you add to a full cake? I think I have been adding too much and they have been falling off the stick.
Kathy, for a whole cake I add just a little bit less than a regular tub of frosting or you could just measure out 1 cup.

That’s a really cute idea Emily. After I had already done the pops I got the idea to write “bite me” on one with a bite taken out of the corner but you could do “Byte Me” instead. lol
