As a sponsor of the Good Food Festival Chicago 2012, formally the Family Farmed Expo in March 15-17, 2012, I was invited by the founder of the Green Earth Institute to visit the farm and learn about their programs and what CSA’s are all about.

Steve Tiwald is the founder of the Green Earth Institute, a local non-profit and 60-acre organic farm on Knock Knolls Road located in the McDonald Farm. Their mission is “to promote nutritional health and environmental sustainability. Using our organic farm as a demonstration and learning center, we grow healthful vegetables in an earth-friendly way and educate about nature, nutrition, and caring for the earth.”

Like many people, I first learned about Jamie Oliver on TV. I already followed him before his Food Revolution days and loved his easy way of cooking, using fresh ingredients. Then on December 2012, I was approached by his team to host a Twitter party under their hashtag #foodrevparty. I have very honored, to say the least.

I am so pleased to announce that I was asked to become a Real Food Blogger Ambassador for Food Revolution and a part of a group of passionate, talented and amazing food bloggers and cooking activists to help fight childhood obesity with Jamie Oliver’s Food Revolution and the Feed US Better campaign.

This campaign is quite simple, to help raise $1,000,000 to help with projects in Los Angeles, California where Jamie Oliver is based.

For Japanese food lovers, Katsu is  a staple. A thinly pounded chicken breast is coated in crunchy yet light, Japanese-style breadcrumbs, called Panko.

Tonkatsu is another version, instead using thinly pounded pork cutlets. Either one is a great hit in my home. What makes Katsu different from the rest of the chops is the sauce, rightfully named, you guessed it, Katsu sauce.

This recipe shows you how simple it is to make Katsu Sauce at home and re-created a Japanese restaurant favorite at home.

A slow cooker is every busy moms best friend. With virtually no work, and LOTS of patience, anyone can make an amazing meal with a slow cooker.

Tonight, I will be working late and will be home way after dinner. One of my biggest burdens when I’m out of the house during dinner time, is leaving my husband to fend for himself and make dinner for the kids! (Let’s be honest, momma’s..) As much as I know he’s capable, as a mom, I like to make sure that there’s a great dinner ready for my family after a long day.

So, last night I plopped a pork roast in my slow cooker, surrounded it with onions, carrots, celery, radishes, swiss chard and a can of crushed tomatoes, set it on low and put the timer on for 12 hours.

This morning, the house smelled AMAAAAAAZING (Oprah voice)!!!! My husband made himself a packed lunch, and dinner is served this evening.

Gotta love a slow cooker!

Ground beef is another staple in my home. From it I can make meatballs, bolognese sauce, burgers and this favorite, Ground Beef Hash.

Using potatoes, corn, onions, garlic, and red bell peppers, this meal is great over fluffy white rice or short cut pasta like macaroni. What I love about this meal is that you can essentially use what’s in your fridge or pantry. Have some carrots? Add them in! Green beans? Cut them up and toss it in! Some broccoli? Why not?

Using what you have readily available makes it simple. The key is to add a few key spices like paprika and believe or not a tiny splash of soy sauce! Let it cook until the liquids are evaporated and it beef gets a little crispy.

I love, love, love panini’s. Panini’s are a classic Italian way to make a hot sandwich. Anything from a simple proscuitto and cheese panini, to a dessert-style hazelnut spread and banana panini, the possibilities are endless.

Panini makers are hot on the market, but if you don’t have one of your own, or simple don’t find the need for one, be like me and make your panini in a non-stick frying pan; weighing it down with another pan!

This recipe is an elegant panini, perfect with a glass of cold sparkling or sweet wine. This also shows that “elegant” doesn’t have to be expensive or out of the norm. The ingredients are simple, gouda cheese, slices of a firm and tart apple (I used Pinata apples), and arugula.
