On Wednesday, February 8th, 2012, I co-hosted an event “Because We Care” for a local food pantry called, Loaves & Fishes Community Pantry. The event turned to be a huge success where I met my goal of raising at least $1,000 for Loaves & Fishes.

Food is obviously something that I not only enjoy, it’s a passion. My passion for food goes beyond cooking and consuming. I long to learn, grow and help with the talent that God has given me.

Knowing that during these hard economic times, many families are struggling to meet their most basic needs, I approached Jody Bender, Community Manager of Loaves & Fishes and pitched her an idea I had to help raise money for the organization.

I have known Jody through the social circles in our town, and she’s even attended some of my cooking demonstrations at Whole Foods Market. But our meeting was our first personal meeting. And it is a night I will never forget.

Tilapia en Papillote sounds very fancy, doesn’t it? “En papillote” is a French cooking method, that is translated to “in parchment”. The classic dish Poisson en Papillote is simply, baked fish in parchment paper!

What’s great about “en papillote” anything is that it food steams in the casing making it light, yet elegant. You can use this method of cooking with thinly pounded chicken breasts, vegetables, Mahi-Mahi, Halibut, or in this case, Tilapia. I most favor using seafood for this kind of cooking.

On Tuesday, January 31st, TheMotherhood.com hosted a Virtual Cooking Class with Chef George Duran (@GeorgeDuranEats), and sponsored by ConAgra Foods.

Chef George talked about simple game-day recipes that can be made in the slow cooker. The slow cooker was unanimously a favorite for preparing meals for although the process “slow”, it saves tons of time in food preparation. I think many of the guests and featured guests like myself, often prepare meals in the slow cooker overnight. So the next day, viola! A fantastic and delicious home cooked meal that took hours to cook, is ready to be devoured.

I am so excited about Episode 5 of the Momma Cuisine Show, as it is my very first on location feature, highlighting Bella Luna Cafe. A huge part of why I love to cook is the almost ten years I have spent in my career in the restaurant industry. Although not concentrated in the kitchen, spending years putting on the production that is the experience of dining out has caused me to love and learn how to cook even more!

In the Momma Cuisine Show, I have decided to go around Chicago to visit local eateries, talk with local food artisans, farmers, foodies and cover local food events at least once a month. Creating Great Everyday Meals is not easy; and all of you who do it know what I mean. I believe that inspiration for home-cooked meals can come from anywhere and everywhere, so I wanted to get out there and find it.
