Paleo Cookies
Between 8 new clients, end of the month paperwork, and throwing a bridal shower at Cassis American Brasserie- I have a crazy week ahead! Doesn’t sound like the wife of a housewife very much does it?
So here is just a quick post on some yummy paleo cookies I made last week. Remember my post on the paleo diet? Its basically a diet devoted to sticking to lean meats, vegetables, fruits, and nuts, while nixing grains and processed foods. Sounds scary right? Probably, until you see the vast amount of creative and scrumptious recipes that are out there!
Health Benefits
Dark Chocolate-not healthy in large amounts, but in comparison to regular chocolate, the less processed dark chocolate is low in sugar, contains antioxidants, and contains the good fats: oleic and linoleic acid.
Almond Butter- rich in heart healthy monosaturated fats, can lower blood pressure, aids in balancing blood sugar levels, and rich in antioxidants.
Craving something sweet? You probably have all the ingredients for these cookies on hand! And fast? You can whip them up in just a few minutes! Perfect for that “I-need-something-sweet-after-dinner” craving.
Go make these cookies now! …but try not to eat them all
Paleo Chocolate Cookies

Ingredients
1 c almond butter
1/4 cup dark chocolate, chopped
1 egg
1/4 cup cocoa powder
2 tsp vanilla extract
1/4 cup honey (or stevia if not paleo)
Directions
Preheat your oven to 350ºF.
In a mixing bowl, combine all ingredients and mix until thoroughly combined. Drop rounded teaspoonfuls onto a parchment lined baking sheet. Press down slightly on cookies to flatten out. Bake for 10 minutes. Enjoy!

Do you think you could use peanut butter instead? I am sure it is not as healthy, but I always have some. Also, under the 1/4 cup cocoa powder you wrote 1/4 with nothing after it? Did you mean to add something else or was it just an extra “1/4 cup?”
By the way, I have made your peanut butter cookies, and I make your baked oatmeal (a little modified) often! Thanks for the recipes! -

Thanks for catching that! Just a typo I actually tried these with peanut butter because I am much more obsessed with peanut than almond butter- but they came out much more dry I think the natural oils in the almond butter keep these moist and gooey. Glad you like the recipes! Thanks for visiting! -

This was great. I know it’s made with almond flour but I think I’m gonna try to throw in some pecans next time. I love milk chocolate, not dark chocolate but it gives me my chocolate fix and is pretty good.

I made these cookies tonight, but I didnt have any cocoa powder. I also added 1 Tbsp of coconut oil to the mix. They came out awesome! My daughter (14 months) loved them too. They were really crumbly and soft in the middle. Yum yum!

Has anyone made them without the sugar? I’m looking to bake a “thank you” for a paleo friend and she definitely comes down on the side of sugar being a no-no.

you could try with stevia! I actually prefer them with stevia…but the husband likes sugar
