We should forgive Daniel Eynard for describing himself rather grandiosely as a théobromeur (‘creator of the nectar of the gods’). Not only is his chocolate outstanding: it is also unique. ‘I believe I am the only chocolatier in Provence to actually produce my own chocolate. It’s made entirely from Ivory Coast beans, roasted at such a low temperature that, although the chocolate is 78% cocoa solids, it doesn’t have a bitter aftertaste.’

I can vouch for that, having greedily scoffed a heap of goodies in the Eynards’ shop next to their production unit. Monique Eynard, a sensorial analyst whom Daniel met while he was living in the Ivory Coast, is pictured with their popular Logissons de Provence – a chocolate take on the famous Aix calisson using clementine purée and Cointreau instead of melon in the almond paste. Daniel, who trained as a food scientist, is particularly proud of his Pitcholinettes Provençales – olives preserved in honey and herbs, then thickly coated in black or green chocolate. That’s surely as provençal as a chocolate can get.

But my favourites are Les Gyngingettes, strips of semi-preserved ginger smothered in that gorgeous chocolate. For (slightly) more conventional munching, there are also bars with 35 different flavours including aniseed, pastis, saffron, cinnamon, cardamom, Japanese tea and Szechuan pepper.

And the Eynards only launched their business in 2009. Watch these motivated people move…
