Commercial Kitchen Food Safety and Sanitation Course

This course provides information and procedures on commercial food safety and sanitation. It is required for all processors using the Sostenga kitchen.  This course is co-taught with the New Mexico Environment Department’s Food Specialist and food consultant of the Sostenga kitchen. Course includes proper food handling; personal hygiene while processing food; sanitation of work surfaces; Critical Control Points; time, temperature and pH requirements; NMED Operational plans requirements; and food labeling requirements.

This is in compliance with OSHA 29 CFR 1910.120 regulations, (40 hour HAZWOPER regulations) this training is required for individuals who plan to work in an area that is defined as a HAZWOPER Work Site. Upon successful completion of the course, students will receive a certificate of completion accepted by regulatory agencies.  This training is appropriate for employees who are potentially exposed to hazardous substances—including hazardous waste—and who are engaged in operations as specified by 1910.120(a)(i-V) and (1926.65 (a)(i-v).

24 HR OPERATIONS

This course trains first responders at the operations level to respond to releases or potential releases of hazardous substances as part of an initial response. Course participants
will learn how to protect nearby persons, property, or the environment from the effects of
a hazmat release by responding in a defensive fashion without actually trying to stop the
release. This course will train personnel to contain the release from a safe distance, keep it
from spreading, and prevent exposures.
This course combines lecture, group activities, exercises and a written exam.
This program meets OSHA requirements and NFPA recommendations for training at the
First Responder Operations level.

Electrical Exam Preparation

Students will learn electrical theory, NEC requirements, practical wiring, and related topics required to pass the NM State electrical exam EE98J. Completion of this course prepares the student but does not guarantee passage of the exam.  Ernest L. Northern New Mexico College is in the spotlight, mainly because of the growing demand for highly-skilled workers. The majority of your training will feature hands-on education where you will learn the ins and outs of the welding trade industry, and then aspire to excel in the specialty welding field in 8 short weeks. Students will learn shop and personal safety,

Guitar Ensemble 

Our guitar program (for beginning and experienced players) consists of an 8 week long curriculum that exposes  students to the wonderful instrument that is guitar. Students will begin to develop many levels of learning in this class including playing, reading music, performing for each other and others, collaborating, playing in groups, playing in pairs, playing solo, all while having lots of fun and developing a love for musical expression. (Beginning and experienced players are welcomed and will be accommodated) Students must provide their own acoustic guitar. Various styles of playing will be discussed and played especially as the program develops. This course is offered to ages 14- adult. Students must furnish their own ACOUSTIC/CLASSICAL GUITAR and folders, binders, or notebooks with lined paper and pockets for note taking and handout materials.

Shotokan Karate

The traditional art of Shotokan Karate helps the student develop self-confidence, self-discipline, self-control, and self-defense. This class will be presented in a stress-free environment and is an excellent way to get in both physical and mental shape. Instructor Marc began studying Karate in 1961 with The Japan Karate Association in Philadelphia, and has been teaching it since 1972. He has taught at his own Karate schools (Dojo) and at various evening adult schools,
elementary schools, and other educational institutions in the Philadelphia area. Marc returns to the East coast every summer to upgrade his own technique and to teach seminars at Karate schools there.

Retablo Making

Retablos are famous worldwide for their expressive beauty. Create your own spin on the
retablo with inspiration from the saints. Learn to paint in the tradition of northern New
Mexico with natural pigments, homemade gesso, and piñon varnish. Juanito Jimenez is a
teacher, professional artist, curator, and lecturer. His work has been exhibited in galleries
throughout the southwest and is part of permanent collections in museums all over the U.S.
He has won numerous awards during his career.

INTENSIVE TRADITIONAL SANTO CARVING/RELIEF CLASS

If you like working with wood, try your hand at carving a saint or angel made from dry
aspen, using only hand tools and natural pigments and varnishes. You will come away from
this class understanding how to carve a figure. This tradition has been handed down within
families for centuries. Learn how to make three-dimensional bultos as they were made in
the Spanish period.
Master Santero Mr. Felix López began making bultos after he lost his father. He was inspired
by the historic Santos (saints) that graced his father’s casket in the morada (Penitente meeting house). An early component of his creative process was working with straw appliqué.
Mr. Lopez is one of the founding members of “La Escuelita,” a small group of Chicano and
Chicana artists in Northern New Mexico established in 1975.
“Being a santero is a calling, a blessing from God. For me it serves to center my life and my
spirituality. Carving is almost like breathing. If I don’t do it every day, something is missing.”
– Félix López, The Oxford Encyclopedia of Latinos and Latinas in the United States (2005)

Beginning Rio Grande Weaving

This introduction course provides the student with the basic fundamentals of weaving.  Students will learn the basic traditional Rio Grande techniques and practical application.

Advanced Rio Grande Weaving

While combining all the techniques students have learned in previous weaving courses, students will begin the masterful process of weaving intricate weaving designs.

Loom Construction

The student will learn loom parts and how to maintain and repair any problem that may arise with a loom by constructing a two-harness.  At the time you enroll for this class, you will be assessed a special materials fee to the cost of the lumber needed in constructing your loom. This class is limited to 5 students.  Any student registering after the 5th student will incur an additional cost of $240.00, for more information regarding the additional please contact Cecilia Romero.

The Spanish Language Immersion Program

Beginning Spanish classes or Espanol para Principiantes focuses on learning the sounds of the language, correct pronunciation, cognates and other vocabulary useful to everyday life, the use of the definite and indefinite articles, personal pronouns, ser and estar, and regular verbs in the present, past and imperfect tenses.  A special emphasis is placed on conversation with some grasp of reading and writing.

Intermediate Spanish or Espanol Intermediario builds on students’ past knowledge and experience by introducing small gems of Spanish and Latin American literature in the forms of poetry and short stories.  It also seeks to dramatically increase individuals’ vocabularies and mastery of the parts of speech and facility in verb usage in all tenses.  Conversation around compelling subjects of common interest is a mainstay.

Spanish for regional native speakers or Espanol para Hispanohablantes de la Region builds dramatically on the preexisting knowledge of the language imparted in the home and community.  Students will be taught how the vernacular Spanish of the region is both the same but different from standard Spanish or Castellano.  An emphasis will be placed on correct grammatical usage of the language, and on an exponential increase of vocabulary. Participants will be exposed to the highlights of Spanish and Latin American literature.

Spanish for teachers or Espanol para Maestros is designed to prepare teachers to pass the four skills Spanish examination that stresses comprehension, speaking, reading and writing.  Discussions in Spanish will center on the special needs and challenges faced by Spanish-speaking children and the kinds of strategies that are most effective for increasing their levels of learning.
