    • 200 g thick sliced roast ham, chopped
    • 4 spring onions, ends trimmed, thinly sliced
    • 85-100 g cheddar cheese, grated
    • chilli tomato ketchup, to serve

    Method

    1. Preheat the oven to 200C/180C fan/gas 6. Scrub the potatoes then dry them on kitchen paper. Trim off any knobbly ends, then slice each potato in 6 long wedges. Put them on a large baking tray or in a roasting dish, drizzle with some olive oil, then toss to coat well. Spread the wedges out in a single layer and season with salt and pepper. Roast for 30 minutes until the potatoes are tender and turning brown at the edges.

    2. Remove from the oven and preheat the grill to high. Scatter the tomatoes, ham and spring onions over and between the potatoes, then sprinkle over the cheese. Grill for about 4-5 minutes until everything is heated through and the cheese has melted and is bubbling. Serve with a dish of ‘witches’ blood’ ketchup for dipping the wedges in.
