Avocado Asparagus Tartine Recipe
I'm a bit distracted. In the best way possible. In the way I get now and then when I'm excited about an idea or a prospect. It started in Portland last month, when I had a happenstance chat with a couple of ladies I admire very much. They gave me the little nudge I needed to start thinking more seriously about a project I'd been casually tossing around in the back of my mind for years. Something fun, something related to what I already do, but something I haven't (exactly) tried before. Vague, I know. It's early in the process. Anyway, the rabbit hole is deep, and I feel like I'm way down in it. I've been caught up in inspiration boards, and ideas, and list-making, and all the things that happen when an idea shifts from the abstract to "let's try it?"...Correspondingly, meals have been scavenged from whatever ingredients are within eight feet of where I'm currently sitting. Which, let's be honest, doesn't always yield something I'm proud of. That said, lunch on Monday was pretty great, and dead simple. I smeared avocado across toasted day-old slabs of sesame bread, layered a bit of arugula and a few stalks of garlicky caraway-sprinkled asparagus on that, then finished it up with a few pepitas.
These little open-faced tartines took less than ten minutes to pull together, and ended up being the epitome of spring. I suspect I'll be eating more of them in the coming weeks. Give them a try, and in the meantime, I'm going to try and make a few things happen on this end so I can share a more details related to what I've been up to. xo -h
Avocado Asparagus Tartine
You can actually slice each tartine into four or five bite-sized pieces for a nice appetizer option as well.
4 toasted slabs of whole grain bread, rubbed with olive oil and a bit of garlic
1/2 tablespoon olive oil
1/2 lb of asparagus stalks, trimmed roughly the length of your bread
1 clove garlic, thinly sliced
1/2 teaspoon caraway seeds1 avocado, pitted and smashed
a couple handfuls of arugula, tossed in a bit of olive oila handful of toasted pepitas, or almonds, or sunflower seeds
A few minutes before you want to eat heat the olive oil in a large skillet over medium-high heat. When hot add the asparagus, and a pinch of salt and cook for about thirty seconds. Add the garlic and caraway, and cook another thirty seconds, or until the spears are a vibrant green. Remove from heat, and assembly the tartines.
Give each piece of bread a generous slather of mashed avocado. Top that with a bit of arugula, a few asparagus spears, and a generous sprinkling of pepitas or seeds.
Serves 2-4

Thanks! Nice and easy recipe!
I have to locate my caraway seeds; this sounds so tasty! I've never had asparagus with avocado but I imagine it's fantastic. Must try sometime.
Looks delicious! Asparagus is one of my favorite things about spring.
I've never thought to pair avocado with asparagus -- looks delish!
So mysterious! Can't wait to see what you're up to. Best of luck with manifesting whatever vision it is you're holding.
Green on green - like it.
I can't wait to hear/see what you have become interested in!
A simple and beautiful lunch. Asparagus does taste best when cooked to "vibrant green"!
They look wonderful..love the green/brown contrast and the pattern underneath them on the cookie sheet is so cool. Beautiful photography showcasing simple yet elegant food!
Oh, I can't wait until spring is here in the Northeast. What I wouldn't give for some fresh asparagus!
Hello, friend. This looks simple and delicious and will surely be made around here, soon. Along similar lines, I'm thinking of fava beans cooked in olive oil until tender, coarsely mashed. That paired with asparagus and a few slivers of parmesan to top it all off. Lovely, right?
I have all these ingredients! I know what I'l be eating for lunch tomorrow. Thanks!
your recipes are always so simple yet there is so much flavor going on, i love it.
this sounds absolutely delicious.
I too often use the scavenging method for throwing together a meal, as well. Hey, sometimes it does work great - like this one! Keen to hear more about this new project when you're ready to share.
I'm all for dead simple lunches. I frequently reach for avocado for that reason.
If I were near, I would have made you an extra share of food tonight since you are busy! ...I started a CSK in little nevada city that launched today! Yay! And, of course I am part of the bazillion people that are thrilled to see what your next amazing creation will be. If you need any help or volunteers I'm in! xoxo ps..kale pesto was on my menu today :)

What a lovely idea! I do love avocado on toast and can't wait until asparagus comes in to season here in the UK so I can try this out :)

And Ioved the line "a happenstance chat"....never heard of that word before....
Perfect for a refreshing lunch! Thank you.
Heidi, every time your subscription emails arrive in my inbox, I always look forward to what you have in store for your readers. I just love this recipe, and will make it along with poached eggs in May for the opening of my B&B season. It's absolutely perfect. Grazie mille. :)
Love a new recipe for 'things on toast' as I call it, I'm building up quite a catalogue, this looks lovely.

I love this! It looks so fresh and tasty. The epitome of spring, indeed.
Thank you Heidi, I will be making this as soon as I get my hands on some asparagus.

I'm on a tartine kick myself, and was just mulling over an asparagus version! This is a lovely recipe.
oh my gosh, these look incredible! what a perfect spring dish!
This is PERFECT now that asparagus is in season! Very nice recipe!
Good luck in that rabbit hole! I made your broccolini salad on Easter weekend. It was wonderful. The tartine looks great. Will have to replace the avocado as I'm allergic to it. Maybe I can use a spreadable cheese like goat?
HS: Absolutely Kathleen!
Heidi, these are lovely. I'm really excited about cooking springtime meals again, and I can't wait to give these a go. I eagerly await more details about this mysterious project of yours. Cooking show? (I really hope so!)
Lovely! Smashed avocado on toast is my go-to light dinner when I don't want to really cook. Can't wait to hear more details of your project!
oh you stinker!!Can't wait to hear.Don't leave us hanging as long as the cliffhanger on DALLAS,that was a long summer.
Absolutely gorgeous photo!
I can't wait to read more about this project! The avocado-asparagus tartine looks like a lovely lunch for one.
I just found lunch! I have avocado, asparagus and arugula in my fridge right now. I wouldn't have thought to combine them all in this way!
I can totally relate to getting swept up in a new project, it's exhilarating and a little bit scary. So eager to learn more!
oh, fun, fun. happy meandering!
until then, yum. smeared avocados + toast are already an ace dish, but add asparagus, and we've an ace in the hole. i imagine a good squeeze of lemon would sit nicely, plus perhaps a crumble of minced hard-boiled egg. only if within eight feet of arms reach, of course.
Wow, these are just beautiful!
Hey me too I am in a rabbit hole AND I happen to have avocado and asparagus from last night. Done!
PS: you are not going to put that out there and then not even give the slightest hint of what you are doing, are you?!
These look great! When I make them I'll be toasting the bread, probably in the same pan that I cook the asparagus in:)
Heidi, I picked up Super Natural Every Day about a month ago and have since become a devoted follower of your work. Your recipes are divine and have given me new inspiration in the kitchen on an otherwise mundane weeknight. I've passed along your blog to a few of my vegetarian friends and we all agree it's a total gem. Can't wait to see what you have in store for us :)
Hey Heidi!
I'm so excited for you and your new adventure planning. Isn't it lovely to get the nudge you needed by people who you admire- like your friends who sound super encouraging?? Good for you lady!
Whetting my appetite, in more ways than one...
Can't wait to hear more about your project! This sounds like the perfect little lunch. I made some avocado cilantro hummus yesterday, and have asparagus ready for me in the fridge.... Thank you for the inspiration!
I will be making this recipe for sure, they look lovely. Thank you:)
The simplicity of this is just flooring me :) Can't wait to try - I love tartines...I have wild leeks growing in my back yard I might add them!
Isn't it wonderful how the French manage to make everything sound sexy--even crusty toast with toppings? One day, when I open my very own bakery I'm definitely putting a tartine du jour on the menu. Super simple comfort food.
Looks amazing - is there a recipe for the bread too? I've gotten on a bread kick and would love to make this one
Looks great! We're just getting into asparagus season here, so this is definitely something I'd like to try. I just had a great asparagus risotto about two weeks ago (which I wrote up on my vegetarian food blog, withoutbacon.wordpress.com). I also like tossing asparagus in a little olive oil and roasting in the oven with garlic. Delicious and easy.
A secret........aaaargh!
Hmm.. you've done cookbooks, you've done videos, you have your amazing blog. Could you be opening some sort of restaurant or store? Excited to find out more details!
I'd love to know what mortar and pestle you have sitting on your counter. I have been putting off buying one for years, looking for the right one!!
This is a perfect lunch or snack, LOL. Healthy too. I love it.
Oh, the suspense! These little tratines look delicious - maybe alongside some cheesy scrambled eggs.
oops, 'tartines'. :)
Your thrown together lunch looks amazing! So simple and to tasty! I am a huge fan of tartines - way m
