Great louche, lots of stuff going on with the aroma and flavors, Just from mulling over the odors I've noted hints of lemongrass, confection, thyme, something like menthol, coriander, pine resin, and something that reminds me of Christmas spices, wormwood, a peppery anise, fresh mown grass, rosemary, clean soil, cardamom, allspice, and a bit of a green tea astringency, all of this definitely leads to a lot of salivation and makes you want to keep drinking. This absinthe is bold and fairly un-traditional, but it's truly wonderful.

This absinthe is fairly spicy and has a lovely aroma, but the spices seem to be obscuring the primary absinthe flavor notes. It's dry, and with prominently bitter (in a good way) wormwood and citrus. I wish the absinthe flavors were a bit more bold, and the spice flavors were a bit less prominent, but it's definitely still a likable absinthe.

This is a great absinthe. Where it's not perfect, I think it'd be damn near impossible to improve upon it. I enjoy it a good deal every time I drink it. It's very creamy and sweet, very pretty to look at, and has a great aroma.
Absinthe La Maison Fontaine Blanche

This absinthe was a delightful surprise. The flavor isn't particularly big and bold, but not at all disappointing. It's quite candied with a really nice wormwood punch. Very fresh and cool, almost like a mint-free mouthwash. I'm really pleased with this one. Generally, I'm not super excited about blanches but this one is fairly complex and it's hard to find anything to complain about.

I like this absinthe: it gives me the sensation of nostalgia of something - I just can't place what that something is - it's like trying to remember a song or place. They flavor is smooth and very well rounded, and it has a lovely smell and louche. It definitely gave me good bearing on the other attempts at the Pernod Fils style absinthes, and is an excellent barometer for appreciating this style of absinthe.
