Loving This BAT Sandwich: Black Forest Bacon, Arugula, Avocado and Heirloom Tomato

When I made this sandwich, I honestly had to stand back and just stare at it for a few minutes because it just looks so pretty.

Normally, bacon is the star in a BLT, but in this creation the heirloom tomatoes steal the spotlight. I used yellow and dark red heirloom tomatoes and cut them thick to show off more of their vibrant colors. You could easily make a vegan version of this sandwich using tempeh bacon. And instead of L, I went A for arugula because I love the flavor of arugula and it is packed with more nutrients than lettuce.

Training Eats This Week: Gourmet Buffalo Hot Dog, Vegan Chicken Wrap, Cherry Vanilla Pie Protein-Packed Smoothie Plus Other Fun Foods

We're getting closer to the Nike Women's marathon on Oct. 20. I am so excited to run my first official half! In the meantime, here are a few things I ate this past week. Tried some new foods and got creative with other food.

First up, I tried a hot dog made with buffalo meat. I love buffalo meat because it's healthier compared to beef with lower saturated fat and lower calories. Buffalo is also high in iron and B12 with good protein. I've eyed these hot dogs in the meat counter at Whole Foods for awhile now and decided to finally get one and try it out. There is nothing artificial in the WF buffalo hot dog so to me it's more like a fancy sausage.

Of course, I could not eat my buffalo hot dog the normal way with a bun. I got all Top Chef and deconstructed my hot dog experience. I boiled the hot dog for 10 minutes and then sliced it in smaller pieces and mixed it with Sonoma Brinery Traditional Raw Sauerkraut, chopped onions, and mustard with a sprinkle of red chili peppers on a bed of mustard greens I got at a local farmers market for a mustard bump.

Dinner Idea: Stir-fry Chicken and Chard With Beet Red Quinoa

After eating the beet red quinoa at Source, I was inspired to make some at home coupled with a chicken and chard stir-fry. I like the yin yang symbolism in the plate. Instead of white and black, I have red and green going on representing a plant flow of energy. See how metaphysical I go there for a sec?

Simple Dinner Dish: Sauteed Turkey Keilbasa With Red and Orange Peppers Plus Onions

This dish is real simple to cook, and makes for a fun dinner. You can pair it with some Quinoa and kale salad. All the ingredients come from Trader Joes.

Pasta Seafood Fest: Lobster, Mussels, Clams and Shrimp With Linguine

I had brunch with the family recently, and dad got one of the specials which was this linguine pasta dish with lobster, mussels, clams, and shrimp. The dish was big enough food to feed three adults. I had to take a photo of dad's dish just because I was so fascinated with the seafood.

This dish reminded me of the East Coast and visions of fisherman coming into the harbor with their catch before most of us are out of bed.

What Is Eating Flexitarian?

Looks yum huh?! Before I get to esplaining what Flexitarian is, let me share that the blueberry, granola parfait and the Grilled Garlic Jalapeno Havarti with Roasted Tomato and Basil sandwich is dairy and egg free. The yogurt in the parfait is coconut milk Greek-style yogurt. The dinner plate is ground turkey with chard, roasted cauliflower and red Quinoa. The green salad has flowering radishes, purple curly kale, and English Peas, and for dessert we have a vegan hot fudge sundae.

Yes, You Can Have Your Bacon And Eat It Too: BLT Pink Beans Salad

Bacon is a great way to get people to try new things, and in a salad you can use bacon sparingly for flavor versus as a main dish on a plate. When I eat bacon, I always get nitrate-free bacon. Black Forest bacon would be a good one for this dish.

Fun Fusion: Chinese Mexican Chicken Salad

I got all "We are the World" on your basic Chinese Chicken salad. You know I simply cannot do anything generic. I got inspiration for my fusion salad from this Chinese Mexican restaurant in Phoenix where I used to live called Chino Bandido where you can get a Carnitas, Egg Foo Yung, Pork Fried Rice burrito with a side of refried beans. The combination is kinda trippy, but somehow it oddly works.

Dinner Idea: Stir-fry Ground Turkey, Purple Kale, and Snap Peas

When I eat meat, turkey is usually my choice. This stir-fry coupled with Jasmine rice is one of my favorite everyday dinners. This dish is also gluten-free.

I found the vegetables at the farmers market. Purple kale is so fun!

Filipino Birthday Tradition: Pancit, Long Noodles For Long Life

It's a tradition in Filipino culture to eat pancit on your birthday. Pancit is our version of chow mein.The long noodles are good luck for a long life. Mom made me some pancit today for my birthday and I ate this whole bowl. I was in bliss!
