A burger with the flavors of the Greek Isles.

Ingredients:
The Tomato Relish: | |
1 cup | Large Cherry Tomatoes, quartered |
⅓ cup | Chopped Kalamata Olives |
1 Tbsp | Finely Chopped Fresh Parsley |
1 Tbsp | Lemon Juice |
1 Tbsp | Extra-virgin Olive Oil |
Lemon Feta Dressing: | |
4 oz | Feta Cheese |
3 Tbsp | Plain Yogurt |
2 Tbsp | Lemon Juice |
1 Tbsp | Honey |
1 Tbsp | Extra-virgin Olive Oil |
1 clove | Garlic |
The Burgers: | |
1 lb | Ground Lamb |
½ cup | Finely Chopped Mint |
¼ cup | Finely Chopped, seeded pickled peperoncini |
1 tsp | Kosher or Sea Salt |
½ tsp | Coarse-ground Black Pepper |
¼ tsp | Cinnamon |
Service: | |
4 | Pita Rounds |
1 | Small Cucumber, thinly sliced |
Directions:
tomato relish:
Place all the ingredients in a lidded jar large enough to comfortably hold all the ingredients, shake to combine and store covered until ready to use.
lemon Feta dressing:
Combine all ingredients in the container of a blender or food processor and purée until the mixture attains a smooth and pourable consistency. Store in a covered jar until ready to use.
Heat your grill to high.
mix the burger:
In a large bowl combine the lamb, mint, peperoncini, salt, pepper, and cinnamon and form the mixture into 4 quarter-pound patties.
grill the burgers:
Grill the lamb patties for 4 minutes on each side.
service:
To assemble the sandwiches, slice about ¼ off the top of each pita and open the pocket. Place one lamb patty and ¼ cup of Tomato Relish in the pocket of each pita. Divide the cucumber slices evenly among the sandwiches and place them inside the pita. Drizzle each sandwich with 1 tablespoon Lemon-Feta Dressing and serve immediately.
