    A fancy Greek restaurant staple that is easy to make at home.

    • Servings: 4
    • Prep Time: 2 hours 20 minutes
    • Cook Time: 10 to 20 minutes
    • Total Time: 2 hours 30 minutes

    Ingredients:

    Tzatziki Sauce:
    1 Large Cucumber, about 1 ½ cups of chopped cucumber
    Cups Greek or Plain Yogurt
    ½ cup Chopped Fresh Mint Leaves
    2 Tbsp Extra-virgin Olive Oil
    2 cloves Garlic, finely chopped
    Kosher or Sea Salt, to taste
    2 lbs Lamb
    Marinate & Basting Liquid:
    5 cloves Garlic, finely chopped
    1½ cup Extra-virgin Olive Oil
    2 Tbsp Oregano
    Kosher or Sea Salt, to taste
    Freshly Ground Black Pepper, to taste
    Kabob Vegetables:
    1 Large Onion, cut into 1" pieces
    1 Large Green Pepper, cut into 1" pieces
    1 Large Tomato, cut into 1" wedges
    Skewers*
    4 Pieces Pita Bread

    Directions:

    create the Tzatziki sauce:

    Trim the ends off the cucumber and with a vegetable peeler remove and discard the skin. Cut the cucumber lengthwise in half; scoop out seeds. Finely chop the cucumber and transfer it to a medium bowl. Stir in the yogurt, mint, oil, and garlic, and season with salt to taste. Cover the sauce with plastic wrap and refrigerate until ready to use.

    prepare the lamb:

    Cut the meat into 2 x 2 inch cubes.

    prepare a marinade:

    In a bowl, combine the garlic, 1 cup of the olive oil, and 1 tablespoon of oregano to form a marinade.

    marinate the lamb:

    Place the lamb cubes in a large resealable plastic bag, add the marinade and marinate, preferably overnight but at least, 2 hours in the refrigerator.

    prepare a basting liquid:

    Combine the remaining olive oil, the juice of 1 lemon, the remaining oregano, and salt and freshly ground black pepper to taste to form a basting liquid.

    build the kabobs:

    Build kabobs by alternately skewering meat and vegetables on skewers until the skewers are full.

    grill the kabobs:

    Grill the kabobs over a medium heat, basting the kabobs with the basting liquid until the meat is cooked through and nicely browned.

    service:

    Serve accompanied by Pita bread and Tzatziki sauce.

    Helpful Tips:

    * if wood, soak in water for 1 hour prior to building the kabobs
