Bacon-wrapped Stuffed Chicken

For the stuffing:
Throw the carrots, pecans, and onion in the food processor and process until well minced, even kind of pasty.
The chicken:
Pre-heat oven to 375.
rinse and pat dry the chicken.
Butterfly each chicken breast and pound a little if desired with a meat tenderizer (I used a big wooden spoon).
Place a tablespoon or two of stuffing in the middle of each breast and close.
Wrap each breast with about 3 slices of bacon, to cover all the outside surface.
Bake for about 35 minutes (internal temp 168) on a wire rack or broiling pan. Then turn on the broiler for 5-7 minutes to crisp the bacon. Turn the chicken over and broil 5 min on the other side.
My family ate it so fast I didn\’t get a chance to take pictures first! What you see is what my 6 year old left behind. I served it with a spinach salad.

- 3 boneless skinless chicken breasts
- 9 pieces center cut bacon
- Handful of baby carrots
- Handful of pecans
- Half handful if roughly chopped onion

I also added salt, pepper, and minced garlic to the stuffing. I had plenty of leftover stuffing, and probably could have stuffed 3 more chicken breasts.

I agree on the garlic. I also seasoned the chicken with a chicken seasoning before wrapping with the bacon. Super good recipe!

Tried this tonight, and was disappointed. Should have read the other comments first before I made the recipe. The stuffing definitely needed some salt and pepper. I assumed that because of the bacon that was why the recipe did not call for salt. Next time I will saute the onions a little bit before I put them into the stuffing (might even just saute all of the stuffing first). Will definitely also add garlic to the stuffing mixture. It’s worth trying again though because it’s so simple, and actually looks pretty fancy for what little time it takes to prepare it.

not sure why my comment got cut off… I commented from the app. Maybe that’s why. But, I made this & used salt, pepper, garlic, greenbeans and carrots for the stuffing. It was amazing. My husband and I both loved it.

I added a bell pepper and an apple to the stuffing. Also, once it was baked and ready, I spooned the yummy bacon dripping over the top. Even my picky 5 year old wanted more!
