Welcome to Sweet Treats Thursday! Glad you made it :)

I'm gonna make this short and sweet, hope that's ok.

I've got a blog design to install, a kitchen to clean, a few other odds and ends for church, and only an hour to do it all before the start of the Duke-Carolina game!!

Oh-- and I need to feature about a BILLION amazing desserts from last week!
I cannot believe how much good stuff got linked up last week.

I NEVER have problems picking my features.
Not that there's not always a lot of great stuff-- it's just I'm pretty decisive.
And usually I can look at a link party and say "That, that, and that. Those are my features."

But not this week. In fact, I'm actually going to cheat a little and give a text-link shout out to a few mention-worthy treats that aren't getting a full feature-- like this Chocolate Hazelnut Torte, these Strawberry Cream Puff Kabobs, the Peanut Butter Cookie Dough Cupcakes, and these Chocolate Raspberry Cookie Bars.

Red Velevet Cheesecake Pudding Mousse

I have to confess something.
I've been holding out on you.

I am actually the pudding mousse queen.
Seriously. No one makes pudding mousse like I make pudding mousse.

I've been under the delusion that I'm going to write a pudding mousse recipe book.
(Go ahead and laugh. Let's just get that out of the way right now.)
But I've recently decided that I just don't want to. I'd rather just blog it.
Which means-- it's time to share :)

 A few years ago, my brother found out that he has Type 1 diabetes.
And in my quest to find a low sugar dessert for him, I found this.

Of course, along the way, I've found lots of ways to make it not-so-low-sugar
(like adding cake mix to it. ahem.),
but, at it's core, it's a low to no sugar dessert!

So stick around. 
I plan on dusting off quite a few pudding mousse recipes in the coming months.
Be excited. For reals.

This recipe is so easy, quick to pull together, looks great, tastes great, is easily fancied up, has about a million variations, can be made low cal/sugar (or not!), and is made out of ingredients you probably already keep on hand.

Red Velvet Pudding Mousse
(4 "sizeable" portion)
 
Ingredients :
  • 1 small box cheesecake flavored instant pudding mix (I always use fat free sugar free)
  • 1 small tub cool whip (I use light or no sugar)
  • 1 1/2 c. milk
  • 1/2 c. red velvet cake mix
  • optional: crushed graham crackers
Instructions:
  1. Whisk together the pudding mix and the milk.
  2. Working quickly, sift in the red velvet cake mix (coming from a girl who hates sifting-- it's worth it here) and whisk together.
  3. Use a rubber spatula to fold in the cool whip. Incorporate completely.
  4. (Normally, you can stop here, but I found the cake mix added some lumps that you don't normally get, so you may find that you need to use an electric hand mixer to get those out)
Serve like this, or layer the mousse and crushed graham crackers in a bowl before serving-- it looks pretty, and tastes AWESOME (especially once the crumbs soften a little bit from the moisture in the pudding)

Ok, ok. So they're not monster cookies in the technical sense.
There's no peanut butter or oatmeal.

But these cookies totally think they're monster cookies.
They've got M&Ms and white chocolate chips.

And I've tweaked the recipe just a little bit to make these guys taste a little more substantial than the typical cake mix cookie.

 And, they're big...

Red Velvet Monster Cookies
Ingredients:
(3 dozen)
  • 1 Red Velvet cake mix
  • 1/4 c. Butter
  • 1/4 c. Shortening
  • 2 Eggs
  • 1 bag Plain M&Ms (pretzel might be good too!)
  • 1 bag (2 cups) White Chocolate Chips
Instructions:
  1. Cream together the butter and shortening.
  2. Mix in the cake mix.
  3. Fold in the M&Ms and white chocolate chips.
  4. Using an ice cream scooper, scoop mounds of the dough about 2 inches apart onto a parchment lined cookie sheet.
  5. Place in the freezer for about 5 minutes, chill the remaining dough in the refrigerator.
  6. Bake at 350 for 10-12 minutes, until edges of the cookie are firm.
  7. You won't need to freeze the rest of the dough to bake if you've put it in the refrigerator.
