Hot Spiced Cashew Coconut Milk | For a Cold Night

I’ve always been one for hot beverages.  You’ll often find me with a hot cup of tea to keep my hands warm and ward off the cold weather.  Hot cocoa and warm milk are favorites of mine as well, helping to settle and cajole me to sleep at night.

The milks I drink most often these days however are nut and coconut milk as they are easier on my stomach.  But I still have a deep seated fidelity to the comforts that hot spiced milk of any kind can bring on a cold winter night.

A New Site and Some Other News

I had been meaning to update my photography portfolio last year but one day turned into another, life moving along at its usual hurried pace, and the idea was quietly set aside for another time.

As chance would have it, at the start of this year I received an email from a friend with whom I had discussed the idea and it got me moving again.  “What better way to start off 2012?” I thought to myself and so I dove into the project.  I hit a few road bumps along the way, as is always the case, but it came together fairly quickly and I’ve been excitedly waiting to share it with you all.

Honey Coconut Macaroons with Chocolate Dipping Sauce | Rochers à la Noix de Coco

I hesitated to call these coconut macaroons because we’ve all had at least one bad experience with those misshapen, heavy, tooth-achingly sweet confections that pass for macaroons sometimes.  The kind whose cloying sweetness hits you over the head at first bite and whose flavor is barely reminiscent of coconut.  A good macaroon is quite the opposite.

The French call their coconut macaroons rochers à la noix de coco or congolais and they are an altogether different breed from the tooth-aching varieties.  Baked until lightly golden on the outside, but still creamy white on the inside they are bites of pure coconut goodness.

My pantry door refuses to shut.

The shelves are increasingly packed with an ever-expanding myriad of ingredients I seem to collect each time I go to the store.

Sometimes I wonder if a few aren’t jumping into my cart on their own, hitching a ride home to join the rest.  They must be; I couldn’t possibly have bought that new jar of olives when there were 2 waiting at home, or that bag of black lentils when there was an unopened bag in the back.

Wednesday I talked a little about the impact of camera phones on photography, and today I have a fun giveaway related to that subject.  It’s a set of smart attachments for your camera phone that allows you to get even more creative with your mobile photography.

As much as I love the freedom that camera phones like the iPhone grant us, they do have some constraints.  The lens on a camera phone is fixed and that makes it more difficult to get very close up to your subject or take shots from a distance.  So when I discovered that interchangeable lenses were available for camera phones I had to check them out for myself.

On January 9th 2007 the iPhone was born and changed photography and the camera market forever.

Five years later there are millions of camera phone enthusiasts and mobile photography has gone mainstream.  People can now visually document every experience and event in their lives and share those moments through social media.

iPhoneography/mobile photography is, at its essence, a form of mobile art and expression.  In the words of Chase Jarvis “the best camera is the one that’s with you.”  Your phone is always with you, ready to capture the little moments of life that might otherwise go unrecorded.
