Luscious Lemon Blueberry Cheesecake Popsicles

Welcome to “The Dog Days of Summer”…

spacer In case you didn’t know, the “dog days”are supposedly the hottest and sultriest days of summer in the Northern Hemisphere, occuring between early July and early September.

I’m very happy to report that we are actually celebrating dog days this summer here in costal Southern California, instead of the “Hot Soup Days” like we did last year when our summer was so cold and gloomy!

And what better way to celebrate the dog days of summer, than with icy cold popsicles…

spacer But not just any old popsicles mind you…

These popsicles are made with goat’s milk and goat cheese, in honor of the July Goaterie festivities hosted by Rachael of La Fuji Mama and Barb of Creative Culinary.

So, I guess what I really should be saying is “Welcome to the Goat Days of Summer!”

Before I share my recipe with you, let me get you up to speed on what the Goaterie is, just in case you wish to join in on all the goat lovin’ fun!

In a nutshell, the Goaterie is

A group of people with shared interests in all things goat.

I.Like.Goats.

I’m not quite really sure how or when my goat love began, but at some point in my life, I started thinking how fun it might be to one day become a goat farmer and make goat cheese and goat’s milk soap.

Realistically speaking, this will probably never happen, but, at least a girl can dream…

Oh, and have I mentioned, I also happen to LOVE goat cheese???

Last but not least, when I discovered I had some food sensitivities 3 years ago, in addition to a gluten sensitivity, {you can read more about that here…}, I started substituting goat’s milk for cow’s milk in my diet, and I still consume it to this day, rotating it with soy milk, almond milk, coconut milk, and occasionally cow’s milk.  

Like cows milk, goats milk is a good source of protein and calcium, however, some research studies suggest it may be better tolerated in certain individuals who have a sensitivity or an allergy to cow’s milk.

In any case, sensitivity or not, I think it is a great idea to include a variety of foods in the diet, and goat’ s milk products can offer a healthy, refreshing alternative to cow’s milk.

And, again, let me reiterate….

I.Like.Goats.

So, in celebration of Goaterie month, I hope these luscious, yet low calorie {55 calories/pop} popsicles will help chill you out during the dog/goat days of summer!

Here’s the recipe…

Lemon Blueberry Cheesecake Popsicles

  • 1 1/2 cups lowfat goat milk
  • 4 ounces goat cheese or goats milk cream cheese, softened
  • Juice from two lemons
  • Liquid stevia extract, 45 drops or to taste OR honey or sugar to taste
  • Fresh blueberries, approximately 1 pint

Directions

  1. Heat the goat milk and softened cream cheese in a microwave safe dish for 1 minute.
  2. Using a hand mixer, beat the cream cheese in to the milk until well blended.  Mix in the lemon juice and stevia or other sweetener to taste.
  3. For ZOKU popsicle maker: Place popsicle sticks in Zoku maker and place blueberries on either side (approximately 8 blueberries per popsicle).  Use chopstick to push blueberries down the sides of the popsicle molds.  Pour milk mixture in molds to fill line and freeze (approximately 10 minutes).  Remove popsicles with Zoku tool and repeat process until you have used up all the mixture.  Makes approximately 8 Zoku pops.
  4. For popsicle molds: Pour mixture in to molds approximately 2/3 of the way to the top and place in freezer until slushy.  Add blueberries, using chopstick to push them in to molds, then add popsicle sticks.  Place in freezer, and enjoy when completely frozen.

    wow i didn’t know that goats milk was more tolerable for those who were lactose intolerant! interesting! i’ll definitely look into it! and the popsicles look yummy!!

    Hi Junia-Goats milk can still be problematic as far as lactose (a carbohydrate)intolerance goes, however, goats milk may be better tolerated by people who have an allergy or sensitivity to the protein component of cow’s milk. Hope you try the popsicles!

    I’m a huge fan of goat cheese but I tried goat’s milk yogurt and it didn’t really do much for me. I have yet to try straight up goat’s milk. I do love goat’s milk ice cream though.

    Sylvie-I’ll admit, I don’t usually consume goat’s milk “straight up” but I do like it in my coffee and I use it for cooking and baking all the time. My kids both like to drink it now too (especially with a little chocolate mixed in!)

    Maris-Glad you like the photos and the pup! His name is Harry, and yes, he is pretty adorable spacer He liked the popsicles too…I accidentally dropped a little bit on the floor and he licked it right up!

    hahaha!!! You had me laughing at goat farmer. I love it. Wouldn’t that be great thought. To just escape this crazy busy life a be a goat farmer.
    Nothin better than a Popsicle on a hot day.
    We’ll be at Balboa Park today!! Just going to the museums though. Love Sea World too!!

    These sound fantastic. There is a lavender goat cheese at the farmers market i adore, I love the sweet with the tangy. I like this better than your camel milk concept spacer

    How does goat milk compare with the 1% organic milk we currently use with respect to calories?

      Hi! The calories are pretty similar: 100 cal/8 ounces for the goat’s milk {I use Myenberg Lowfat Goat milk} v. 120 calories/8 ounces for 1 % organic milk. Enjoy!

    So excited to see that you are using Meyenberg products! I think that these popsicles are one of the most creative recipes using our cream cheese that I have ever seen. My grandfather started the company way back in 1934. Can’t wait to try these. I know that my children will love them and so will I!

    I thought for sure I had left a reply here…because these are at the TOP of my list to try. I love honey yogurt and I have some goat cheese with fig in it…and am DYING to join those two together. All I can say is…Oh My YUM!

    Did you use stevia in your zoku? I want to get a zoku but specifically for making stevia pops. Zoku seems to recommend not using sugar substitutes. I would like to know if stevia pops work with the Zoku. Thanks!
