We have a favorite soup around here that has become my trademark for which I comfort
friends and family with.

I call is Easy Cheesy Potato Soup!
Directions:
Peel and dice 7-8 potatoes (more or less depending on how big of a crowd you're feeding)
Cover with water and boil with ONE stick of butter, salt, pepper, and Minced Onion Flakes (or you could add in some cooked fresh onion)
Cook until tender but not mushy!
Do not drain the water
Reduce the heat and add (desired amount of) cubed Velveeta Cheese, about a 1/2 cup of Milk, ONE can of Cream of Chicken Soup, and additional salt and pepper if desired.
Continue stirring and cooking until cheese is melted
Topped with pieces of bacon and shredded cheese makes it even better!
Goes well with crackers (we really enjoy Spicy Crackers) or corn bread.
