Jell-o Poke Cupcakes {Poke Cake}

I really like sharing fun and easy recipes like this next one. 
Raise your hand if you've heard of Poke Cakes.

 Chances are you have and you have eaten them in some form or other over the years. 
If you haven't heard of them, then let me introduce you.

Country Cook friend, please meet Poke Cake. Poke Cake, this here is my good friend who would like to eat you. It was nice knowin' ya.

These cupcakes are a lot of fun to make. Your kids can help you (they love to poke the holes) and these are so much fun to take to a potluck or BBQ. Folks love them and I gotta tell ya, they are usually pretty surprised to find that you made this with a boxed cake mix and jello. My co-workers were. They had no idea. A few of them had never heard of this before so when some of the gals asked me for the recipe, they were shocked! 
Boxed cake mixes are good y'all! 

I used to be one of those folks who always thought making absolutely everything from scratch was best. And sometimes it is, but when you don't have the time (or maybe the energy) to go totally from scratch - these little helpers are a fantastic substitute.

Ingredients:
1 box White Cake Mix
(Ingredients required to make cake; usually egg whites, water and oil)
1 box strawberry gelatin
1 cup water
1 container of Whipped White Frosting

Directions:
Mix cupcakes as directed on the back of the box and bake as directed.
Allow cupcakes to cool completely.
Boil 1 cup water and add jello, stir until completely dissolved.

 Poke holes in cupcakes with fork or toothpick. Don't be afraid to pick right down in there several times. You want plenty of holes for the jell-o to seep into.

Using a spoon, pour strawberry gelatin mixture over cupcake.

They are still a little naked. Now they need to go into the fridge for about 2-3 hours to set.

Once set, frost cupcakes using whipped frosting. 
And if you like, top it off with fresh, sliced strawberries and enjoy!

It's a Poke Cake Party!
Cook's Note: You can use any combination of cake mix or jello flavor you like with these. You can use a vanilla or yellow cake mix. Orange Jello works well with these. Or try lemon cake mix with lemon Jell-o (one of my personal faves).Also, for 4th of July celebrations, it might be fun to use a Berry Blue Jello as well.

Here is what the lemon looks like. This is boxed lemon cake mix, with lemon jell-o and lemon frosting. It is so moist! We have nicknamed these Lemon Drops.
