Chinese-Style Chicken Buns

These chicken buns are delicious. The filling is very easy to make and has a wonderful Asian flavour. Altogether it takes a little bit of time to prepare these filled buns but the delicious result is definitely worth the effort. However, they are not difficult to make quite the contrary.
Served with a side salad, they make a pretty wholesome and delicious meal. You can serve them warm or cold.
Ingredients
makes 8 buns
For the dough
- 140 ml / 5/8 cup low-fat, lukewarm milk
- 1 tsp dried yeast
- 1 tsp sugar
- 120 g /1 cup whole wheat flour
- 130 g /1 cup all-purpose or bread flour
- 1/2 tsp salt
- 3/4 tbsp butter, soft
For the Filling
- 5 cm / 2” piece of fresh ginger, grated
- 2 tbsp soy sauce
- 1 1/2 tbsp oil
- 1 tbsp honey
- 2 chicken breasts, chopped
- 8 spring onions, chopped
- 2 tbsp fresh or frozen cilantro, chopped
- salt, pepper
For the Topping
- sesame seeds
- milk or egg glaze (1 egg yolk + 1 tbsp water)
Directions
In a bowl combine the yeast, lukewarm milk, and the sugar. Set aside for a few minutes.
In another bowl, combine the whole wheat flour, all-purpose flour, and the salt. Add the butter and the yeast mix. Knead with your hands for about 8 minutes until the dough becomes elastic and smooth. Place the dough in a clean bowl, cover it, and let it rise for about an hour or until it doubled in size.
In the meantime, prepare the filling. Mix the soy sauce, ginger, oil, and honey together. Add the chopped chicken and toss it to coat. Let the chicken marinade for half an hour.
Heat a large, non frying pan or wok. When it’s hot, add the chicken and cook it for about 5 to 6 minutes. Add the spring onions and cook for an additional 2 minutes, or until the chicken is done. Take it off the stove and add the cilantro, salt and pepper. Set aside.
When the dough is ready, place it on a lightly floured work surface and punch it down. Then divide it into 8 pieces. Shape a ball out of each piece and then roll each one out to a circle.
Divide the chicken filling evenly and place it onto the 8 dough circles. Brush the edge of each dough circle with milk or egg glaze. Now take the sides of the dough rounds and pinch them together to seal. Place the buns seam-side down on a baking sheet lined with parchment paper. Cover the buns and let them rise for about 30 minutes.
Preheat the oven to 375°F / 190°C.
Brush the top of each bun with the egg glaze or milk. Sprinkle with sesame seeds. Bake for 15-20 minutes, or until they become golden brown.

Gefüllte Brötchen mit Hühnchen Chinesischer Art
Zutaten
8 Brötchen
Für den Teig
- 140 ml / 5/8 Tasse Milch, reduzierter Fettgehalt, lauwarm
- 1 TL Trockenhefe
- 1 TL Zucker
- 120 g / 1 Tasse Vollkornweizenmehl
- 130 g / 1 Tasse Mehl
- 1/2 TL Salz
- 3/4 EL Butter, weich
Für die Füllung
- 5 cm / 2” groβes Stück frischen Ingwer, gerieben
- 2 EL Sojasoβe
- 1 1/2 EL Öl
- 1 EL Honig
- 2 Stücke Hühnerbrust, in kleine Stücke geschnitten
- 8 Zwiebelpiepen, gehackt
- 2 EL frisches oder gefrorenes Korianderkraut
- Salz, Pfeffer
Für die Glasur
- Sesamkörner
- Milch oder Eierglasur (1 Eigelb + 1 EL Wasser)
Zubereitung
Die Hefe, die lauwarme Milch und den Zucker in einer Schüssel vermengen. Für ein paar Minuten beiseite stellen.
In einer anderen Schüssel, beide Mehlsorten mit dem Salz vermengen. Die Butter und den Hefemix hinzufügen. Den Teig mit den Händen für ca. 8 Minuten kneten bis der Teig geschmeidig und elastisch geworden ist. Den Teig dann in eine saubere Schüssel geben und zugedeckt ca. 1 Stunde gehen lassen oder bis der Teig zur doppelten Grösse aufgegangen ist.
In der Zwischenzeit die Füllung zubereiten. Die Sojasoβe, den Ingwer, das Öl und den Honig in einer Schüssel vermengen. Die Hühnchenstücke hinzufügen und gut mit der Marinade vermengen. Das Ganze dann eine halbe Stunde marinieren lassen.
Einen beschichteten Wok oder Pfanne erhitzen. Wenn es heiβ genug ist, die marinierten Hühnchenstücke hinzufügen, und bei mittlerer Hitze ca. 5 bis 6 Minuten braten. Die Zwiebelpiepen hinzufügen und für ca. 2 weiter Minuten braten oder bis das Hühnchen gar ist. Die Pfanne vom Herd nehmen und das gehackte Koriandergrün unterrühren. Mit Salz und Pfeffer abschmecken; beiseite stellen.
Den aufgegangenen Teig auf eine leicht bemehlte Arbeitsfläche geben und und mit der Faust niederdrücken, dann in 8 Stücke aufteilen. Aus jedem Teigstück eine Kugel formen und diese dann jeweils zu einem Kreis ausrollen.
Die Füllung in 8 Portionen aufteilen und auf den 8 Teigstücken verteilen. Den Rand der Teigkreise mit Milch oder der Eigelbglasur bepinseln. Dann den Teigrand mit den Fingern über der Füllung zusammendrücken. Die Brötchen umgedreht (also mit der “Teignaht” nach unten) auf ein mit Backpapier belegtes Backblech legen. Die Brötchen zugedeckt an einem warmen Ort ca. 30 Minuten gehen lassen.
Den Backofen auf 190°C / 375°F vorheizen.
Die Brötchen mit der Milch oder der Eigelbglasur bepinseln und mit Sesamkörnern bestreuen. Für 15 bis 20 Minuten backen oder bis die Brötchen eine goldbraune Farbe annehmen.

Meatloaf with Oats and Sunflower Seeds

When we went to Scotland a few years back, we tried haggis. This traditional Scottish dish is probably not for everyone but you should at least give it a try when finding yourself in that part of the world. One of the ingredients in this savoury pudding is oatmeal. So I thought why not add oats to a meatloaf; and it worked great. You cannot really tell that oats are added but it makes for a bigger, healthier meatloaf. The sunflower seeds in this meatloaf however add a wonderful nutty flavour and texture (just like in these meatballs).
Ingredients
- 2 slices whole wheat bread (or other bread), soaked in water
- about 1 lb / 450 g ground meat (pork, beef, or a mix of both)
- 1 egg, uncooked
- 1 medium onion, chopped
- 1 cup sunflower seeds
- 1 cup regular rolled oats
- salt, pepper
- 1 tsp turmeric (optional but very healthy!)
- 1 tsp paprika
- 1/4 tsp nutmeg
- 2 tbsp mustard of your choice (I used Dijon)
- plenty of fresh or frozen, chopped parsley
- 3 eggs, hard boiled & shelled
Directions
Squeeze the water out of the bread slices. Pull it apart into small pieces and put the bread into a bowl.
Add the ground meat, egg, chopped onion, sunflower seeds, and the rolled oats to the bowl. Combine all the ingredients with your hands.
Add the salt, pepper, the spices, mustard, and the parsley to the meat mix. With your hands incorporate these ingredients.
Put enough meat mix into a 8” x 4” (20 cm x 10 cm) baking form to cover the bottom. Place the 3 peeled eggs in a line on top of the meat and then cover them with the rest of the meat.
Bake at 375°F / 190°C for about 50 minutes or until the meat is done.

Hackbraten mit Haferflocken und Sonnenblumenkernen
Zutaten
- 2 Scheiben Mischbrot oder Vollkornbrot (oder anderes Brot), in Wasser eingeweicht
- ca. 450g Gehacktes (vom Schwein, Rind oder gemischtes)
- 1 Ei, roh
- 1 mittelgroβe Zwiebel, klein geschnitten
- 1 Tasse Sonnenblumenkerne
- 1 Tasse Haferflocken
- Salz, Pfeffer
- 1 TL Turmeric/Kurkuma (kann weggelassen werden, ist aber sehr gesund!)
- 1 TL Paprika
- 1/4 TL geriebene Muskatnuβ
- 2 EL Senf nach Wahl (Ich habe Dijon genommen)
- Petersilie, frisch oder gefroren, gehackt
- 3 hartgekochte Eier, ohne Schale
Zubereitung
Mit den Händen das Wasser aus den Brotscheiben drücken, und das Brot dann in kleine Stücke zupfen. Die Brotstücke in eine Schüssel geben.
Das Gehackte, das Ei, die klein geschnittene Zwiebel, die Sonnenblumenkerne und die Haferflocken zum Brot in die Schüssel geben. Mit den Händen alles gut vermengen.
Das Salz, den Pfeffer, die restlichen Gewürze, den Senf und die Petersilie gut untermischen.
Einen Teil der Fleischmasse in eine 10 cm x 20 cm (4 inches x 8 inches) Backform geben. Die hartgekochten Eier in einer Linie auf das Fleisch legen und dann mit der restlichen Fleischmasse bedecken.
Im Ofen bei 190°C / 375°F für ungefähr 50 Minuten backen oder bis das Fleisch gar ist.

Black Forest Dessert

This dessert is inspired by the German Black Forest Cake (recipe here). The Black Forest Cake takes a bit of work to prepare but this dessert is done in no time if you have the ingredients at hand. The flavours of the sour cherries together with the rich chocolate and the tapioca pudding (or whipped cream) let you enjoy the delicious Black Forest experience without all the work.
Ingredients
- sour cherry pie filling or Rote Grütze (a German and Scandinavian fruit pudding/dessert) with sour cherries
- flourless chocolate cake or brownies
- tapioca pudding (or whipped cream)
Directions
Spoon some of the sour cherry pie filling into dessert cups.
Crumble some of the cake/brownies and place the crumbs on top of the cherries.
Then spoon some tapioca pudding (or whipped cream) over the chocolate cake/brownies.
Top the dessert with one additional cherry and a little bit of the sauce. Decorate with a few cake/brownie crumbles.

Schwarzwälder Dessert
Zutaten
- Rote Grütze mit sauren Kirschen (oder Kirsch-Pie-Füllung mit sauren Kirschen verwenden)
- Schokoladenkuchen ohne Mehl oder Brownies
- Tapiokapudding oder Schlagsahne
Zubereitung
Etwas von der Roten Grütze in jedes Dessertglas geben.
Ein Stück (oder mehr) Kuchen/Brownies zerkrümeln und auf die Rote Grütze geben.
Anschlieβend den Tapiokapudding oder die Schlagsahne auf dem zerkrümelten Kuchen verteilen. Mit einer Kirsche, ein wenig Rote Grütze sowie mit in paar Kuchenkrümeln dekorieren.

Golden Peach Crumble Muffins

These muffins are absolutely delicious. Crispy streusel/crumbles on top, moist peaches inside and a lemony muffin on the bottom. It’s quite a tasty combination packed in one muffin.
Ingredients
makes 12 muffins
Muffin Batter
- 50 g / 3 1/2 tbsp butter, room temperature
- 65 g / 1/3 cup sugar
- 2 tsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract or 1 sachet vanilla sugar
- 2 eggs
- 65 g / 1/2 cup all-purpose flour
- 60 g / 1/2 cup whole wheat flour (I used whole wheat flour from white hard wheat)
- 1/2 tsp baking powder
Fruit Filling
- 1 can peaches (15 oz / 425 g)
Crumbles
- 50 g / 2/5 cup all-purpose flour (or more if necessary)
- 50 g / a little less than 2/5 cup whole wheat flour (once again I used whole wheat flour from white hard wheat)
- 65 g / 1/3 cup sugar
- 75 g / 5 tbsp butter, room temperature
- 1 tsp vanilla extract or 1-2 sachets vanilla sugar
Directions
In a bowl, beat the butter with an electric mixer until it becomes creamy and smooth. Add the sugar and combine it with the butter. Then add the lemon juice, lemon zest, vanilla extract, and the eggs. Mix again.
In a separate bowl, combine the all-purpose flour, the whole wheat flour, and the baking powder. Sieve the flour mixture over the butter mixture and combine everything with a spoon.
Spoon the batter into a muffin tin which has been greased or lined with muffin liners.
Drain the canned peaches, and cut them into smaller pieces. Place the peaches onto the muffin batter.
For the crumbles (streusel), combine the all-purpose flour with the whole wheat flour and the sugar in a bowl. And the butter and vanilla extract and knead with your hands until you have crumbles. Divide the crumbles evenly onto the 12 muffins.
Bake them at 175°C / 350°F for 15 to 20 minutes or until they’re golden brown.

Goldene Pfirsich-Streusel-Muffins
Zutaten
Für 12 Muffins
Muffinteig
- 50 g / 3 1/2 EL Butter, Zimmertemperatur
- 65 g / 1/3 Tasse Zucker
- 2 TL Zitronensaft
- 1 TL geriebene Zitronenschale
- 1/2 TL Vanilleextrakt oder 1 Pck Vanillezucker
- 2 Eier
- 65 g / 1/2 Tasse Mehl
- 60 g / 1/2 Tasse Vollkornweizenmehl
- 1/2 TL Backpulver
Fruchtfüllung
- 1 Dose Pfirsiche (425 g)
Streusel
- 50 g / 2/5 Tasse Mehl (oder mehr falls nötig)
- 50 g / ein biβchen weniger als 2/5 Tasse Vollkornweizenmehl
- 65 g / 1/3 Tasse Zucker
- 75 g / 5 EL Butter, Zimmertemperatur
- 1 TL Vanilleextrakt oder 1-2 Pck Vanillezucker
Zubereitung
Die Butter in einer Schüssel mit einem elektrischem Mixer geschmeidig rühren. Den Zucker zugeben und unterrühren. Dann den Zitronensaft, die Zitronenschale, das Vanilleextrakt und die Eier zufügen und mit dem Mixer alles gut vermengen.
In einer anderen Schüssel, das Mehl mit dem Vollkornweizenmehl und dem Backpulver vermischen. Das Mehl dann auf den Buttermix sieben und mit einem Löffel alles gut vermengen.
Den Teig nun in eine eingefettete oder aber mit Papierförmchen bestückter Muffinform geben.
Die Pfirsiche abtropen lassen und in kleinere Stücke schneiden. Diese dann auf dem Muffinteig verteilen.
Für die Streusel werden das Mehl, das Vollkornweizenmehl und der Zucker in einer Schüssel vermengt. Dann die Butter und das Vanilleextrakt hinzufügen und alles mit den Händen zu Streuseln verarbeiten. Die Streusel auf den Pfirsichen verteilen.
Die Muffins bei 175°C / 350°F 15 bis 20 Minuten backen oder aber bis sie die Streusel goldbraun sind.

German Hot Lemon Drink – Heiße Zitrone

With winter still very much present, our immune system could profit from this booster, sick or not . In Germany, we make this drink as a remedy for any cold and flu due to its high content of Vitamin C. This drink can also help you in preventing sickness in the first place.
Let me tell you something about these lemons. Last year, family here in California gave us some lemons from their own garden. I grew up in northern Germany and growing lemon trees is not something you do there. I treasured these lemons. I peeled them, froze the zest, then I juiced them and froze the juice. It was great having lemon juice and lemon peel handy whenever needed. In the beginning of January we received some more lemons from them and let me tell you, I am excited. Thanks again, Kathy and Ladd.
Ingredients
makes 2 drinks
- 1 or 2 lemons
- honey
- water
Directions
Bring enough water to fill two cups to a boil. In the meantime, juice the lemon(s) and pour the juice into 2 cups. Add a teaspoon or two of honey into each cup. Let the water cool down until it’s warm only.
While you wait you can read this little tip: Do not use boiling water or water that is too hot. High temperatures destroy the Vitamin C and render it ineffective. So please let the water cool down until it’s warm but not hot anymore.
When the water is ready, pour it into the cups. Stir until the honey is dissolved. Add more honey if necessary, stir again.
Ready!
Heiβe Zitrone
Zutaten
für 2 Personen
- 1 – 2 Zitronen
- Honig
- Wasser
Zubereitung
Genügend Wasser für 2 Tassen aufkochen. In der Zwischenzeit, die Zitrone(n) auspressen und den Saft auf 2 Tassen verteilen. Einen Teelöffel Honig oder auch zwei in jede Tasse geben. Das Wasser nun eine Weile abkühlen lassen bis es nur noch warm und nicht mehr heiβ ist.
An dieser Stelle ein kleiner Hinweis: Kein zu heiβes oder gar kochendes Wasser verwenden, denn dann wird das Vitamin C zerstört und verliert seine Wirkung.
Anschlieβend die Tassen mit dem Wasser aufgieβen und solange rühren bis der Honig sich aufgelöst hat. Probieren und eventuell mit etwas mehr Honig süβen.
Fertig!
