Small town Missouri is dreary and cold around this time of year.

Going outdoors is a bit of a chore. No more running out the door at the spur of the moment. One must be prepared, bundled up.

Because despite the chill in the air, there’s still so much beauty to be discovered. Even in overgrown fields.

And along the back roads of rural Missouri, where the smallest of wildflowers still cling to hope and the promise of warm summer days.

Turkey Salad Wholewheat Wraps

Fast. Fresh. Healthy. And not another boring sandwich.

Break out of your boring lunchtime routine with these delicious Turkey Salad Wholewheat Wraps.

Ingredients:

  • 1 wholewheat tortilla
  • 1-1/2 cups prepared romaine salad mix, chopped
  • 3 cherry tomatoes, quartered
  • 1 slice lean turkey, chopped
  • 2 tablespoons salad dressing

Preparation:

Warm wholewheat tortilla in microwave for 15 seconds.

Place warm tortilla on a plate and spoon salad mix along the center of the wrap, leaving an empty space 2-inches along the bottom. Top romaine salad mix with a layer of dressing, lean turkey and cherry tomatoes.

Fold bottom edge of tortilla wrap toward the center then fold sides inward.

Eat. Enjoy. Thank me later.
