Buffalo Chicken Sub Sandwiches

“Using good, fresh chili-powder makes a real difference. Check the label before you buy one-blends that include oregano, and ancho or New Mexican chilies will have a nice nuance.” This sub sandwich is awesome and guys will love it. It serves 4 with a prep time of about 20 minutes. This recipes is rated a “Two Chile” heat level. Enjoy!
Ingredients:
- 3 Boneless, skin-on chicken breast halves (about 1 1/2 pounds)
- 2 tsp chili powder
- salt and pepper
- 6 Tbsp butter
- 1 to 2 ribs of celery
- 4 sub buns
- 4 Tbsp. hot sauce
- 2 ounces creamy blue cheese
- 1/4 cup mayonnaise or sour cream
Directions:
- Preheat oven to 350 degrees. Rinse and pat chicken dry with paper towel. Season the chicken all over with chili powder andย some salt and pepper.
- Heat a large skillet over medium-high heat; add 2 Tbsp. butter. Cook chicken on skillet, skin-side down until crispy and golden. Flip the chicken over and cook an additional 4 minutes. Put the chicken in a baking dish and bake until firm, about 10 minutes. Set chicken aside to rest for 5 minutes before slicing.
- Thinly slice the celery.
- Cut the bread length wise. Put 2 Tbsp. butter in skillet and toast the inside of the sub buns. Transfer the bread to a platter and brush with 1/4 of the hot sauce. Do this with all the buns.
- Spread the blue cheese evenly on all the toasted buns. Layer some celery evenly on top of the cheese.
- Place the sliced chicken on top of the celery and spread the mayo on the top half the sub buns.
- Press the sub together and enjoy!
