Well hello there!

How is everyone’s week going?  Mine is pretty great.  Got my first midterm out of the way (not sure of my grade yet. eek!) and had a pretty easy breezy week since.

I have also been sampling new (and might I add) delicious flavors Chobani has sent me to try.  I feel so spoiled!

spacer

Chobani launched three new flavors:  blood orange, passion fruit, and apple cinnamon.

spacer spacer spacer

Seriously, the flavors are all amazing. I think I may be leaning toward apple cinnamon as my new favorite.  It’s tastes like a slice of apple pie wrapped up in a cup.

spacer

Onto fabulous dinner news…

I was so excited to try this recipe for lentil tacos when I saw it on Heather’s blog the other day.

spacer

For the most part, I have cut out most animal proteins and don’t remember the last time I had beef.  I do miss them in tacos..a lot!  The lentils mimic the taco meat.  I kid you not, they taste like the real thing, if not better.

Lentil Tacos  courtesy of Run Lean Green

Ingredients:
  • 1 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 teaspoon canola oil
  • 1 cup dried lentils, rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 1/2 cups vegetable broth
  • 1 cup salsa
  • 12 tortillas
  • 1 1/2 cups shredded lettuce
  • 1 cup chopped fresh tomato
  • 1 1/2 cups shredded reduced-fat Cheddar cheese
Directions:
In a large nonstick skillet, sauté the onion and garlic in oil until tender.

spacer

Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute.

spacer

Add broth; bring to a boil.

spacer

Reduce heat; cover and simmer for 25-30 minutes or until the lentils are tender.

spacer

Uncover; cook for 6-8 minutes or until mixture is thickened. Mash lentils slightly.

spacer

While I finished up cooking, the boy got going on warming up the tortillas.

spacer

To finish off the recipe, stir in or simply top with salsa. Spoon about 1/4 cup lentil mixture into each tortilla. Top with lettuce, tomato, and cheese.

spacer

This recipe couldn’t have come together any quicker.  I even got some studying in while the lentils were cooking.  Score!

spacer

The boy’s mom had made fresh salsa which took these over the top.  Nothing beats homemade salsa.

spacer

Swanky boyfriend proclaimed this (and I quote) “the best dish I have ever made him”.  Now friends, that says something.  Make this soon!  You won’t regret it.  And I am guessing your boy won’t mind it either. spacer

spacer

This recipe is a keeper!

spacer

I am pretty exhausted.  Off to 5 a.m. Zumba in the morning!  Have a great evening. Thanks for reading. spacer

So back to my weekend…when people think Vegas, I don’t think they often picture snow.

spacer

Well, we get snow that’s for sure!  Up in Lee Canyon about 30 miles from downtown Vegas is where I spent my Saturday.  The folks at Las Vegas Ski and Snowboard Resort and Forte Creative Media provided my Vegas blogger friends and I a day to explore all of what Lee Canyon has to offer.

spacer

Lee Canyon gets an annual snow fall of 140 inches.  And bonus, 300 or more days of sunshine!

spacer

The views at Lee Canyon are just breathtaking!

spacer

When we all arrived, we got suited up!  I needed everything!  Shoes, pants, and a board!

spacer

If you saw board 144 out on the slopes, you will know she was the the girl on her bum most the day. spacer

spacer

But she looked cool doing it, no?  I actually felt like a snowman I had so many layers on.  But warm I was.

spacer

After we were suited up and ready to go, the group went over future plans for LV Ski and Snowboarding Resort.

spacer

While sipping a hot cup of cocoa.  Life is pretty rough. spacer

spacer

The provided a fabulous press kit to all the bloggers.  The Master Development Plan will include a total of 50 trails and 10 lifts total once complete.

spacer

This plan also includes upgrades in equipment and a larger area for seating.

spacer

Although they offer quite a few slopes, this beginner stuck to the easy stuff.

spacer

Here we are!  All ready to hit the slopes!

spacer

Among the bloggers, we had groups of skiers and snowboarders.

spacer

It was pretty busy being a Saturday and all, but there was plenty of room for me to fall on my butt snowboard.

spacer

We headed over for our snowboarding lesson.  Our instructor, Ray, was awesome!

spacer

He first when over the basics and eventually tried snowboarding with only one foot strapped in.

spacer

Granted I fell many times, I started to get the hang of it.  I even managed to do a couple ‘S’ loops.

spacer

We had beautiful views from the lift.  We lucked out with amazing weather too!  I actually had to take off my jacket while on the slopes, I was breaking quite the sweat.

spacer

A huge success was not managing to fall while getting off the lift…finally got it down after the third try.

spacer

It was such a fun time!!  I can’t wait to go up to Lee Canyon again soon!
