it’s all about friends and food

I’ll be honest I’m not a big fan of football. I do like to watch basketball on occasion, but football? eh… Chris likes to watch it a lot of course so I try to act like I’m interested, but usually end up staring at my phone or going to another room. There is one occasion once a year during the lovely thing we call SuperBowl that I don’t mind football so much, mostly because I’m not watching the game at all except the funny commercials… so I’m not a big fan of football, but give this gal some good friends and tasty food and I’m all over it! Chicken and Black Bean Chili

Anyone else ready for spring yet? We don’t even get that cold here and I’m sure ready. Only about a few more months for us and it should be warming up nicely. Can’t wait! Because it will be a bit chilly out for a little while longer, it’s still the perfect weather for a comforting bowl of piping hot chili. This one is a keeper and it’s super easy too. [More Yum →]

pasta and puff pastry heaven

I have made a few pasta dishes in my day and I would say that pasta a pretty solid staple in our house. It’s super cheap, really versatile and has a great amount of energy when the riding mileage is up. Most of the time I’ll mix it with a marinara sauce and veggies, top it with cheese and then broil until it’s golden and bubbly. If you want to take pasta to the next level, have a foodgasm, or impress your guests, then you should definitely make this recipe! ‘date night’

Chris and I have been doing fairly well with the Eat In Month challenge so far. We are in the home stretch now! I have had a few slip-ups and went out to eat on the weekends on several occassions. Once after a bike ride with friends and a couple other times when I was invited to catch up with family. I’m definitely not going to turn down visiting with family that’s for sure. For the most part I have been doing well during the week with preparing enough food for dinners (a.k.a. giant casseroles) and prepping our lunches for the next day (if Chris doesn’t forget his lunch box on the counter!). In lou of going out to eat for a ‘date night’ per se, I whipped up these tasty date bars for a nice sweet treat we both enjoyed.
