Happy Monday! Hope you all had a great weekend and are surviving the time change! I have to say that I am LOVING being able to take my dinner pictures in natural lighting again! I know… it’s a crazy food blogger thing to get excited about
Let’s get to this week’s BSI winner! So, I’m not sure if my ingredient choice of prosciutto was a little too scary for everyone because I only got a few submissions. However, the ones I did get were absolutely delicioso!
My Bizzy Kitchen’s Chicken Saltimbocca…
Carolynne from Just Like Magic with Grilled Asparagus Wrapped in Prosciutto…
Ingredients:
1 bunch asparagus, cleaned and ends snapped off
200 grams of prosciutto slices
salt & pepper (Any other spices you want can be used as well)
coking spray
Directions:
-Wrap 1 piece prosciutto around 2 spears of asparagus. Keep in place
using toothpicks if necessary.
-Repeat with remaining asparagus.
-Spray asparagus/prosciutto bundle with cooking spray.
-Sprinkle salt & pepper (or other spices) over asparagus.
-Heat BBQ on medium high heat.
-BBQ asparagus for 5 minutes, flipping halfway through. You can cook longer, depending on how well done you like your asparagus.
-Serve with any BBQ meal.

Now for the winner! Gah!!!! It’s so hard to choose! They all were so amazing, but there was one that I couldn’t stop thinking about – Carolynne’s Grilled Asparagus Wrapped in Prosciutto! I’ve had asparagus wrapped in prosciutto, but never cooked on the grill! I can’t wait to make a big tray of these for my next barbeque!

Over the weekend I had two major baking fails. First, I tried to make bagels with expired yeast. They didn’t rise at all…or taste good. Then I attempted Avocado Banana Bread and it was not sweet enough and was really dry. Ugh.
Hmm It was a typical weekend for me no new recipes, though looked up a lot I wanna try!! =)
I was going to participate – I always want to but always seem to miss out – but I forgot to get prosciutto =(

I was going to participate, too, but then things got hectic… I have to admit that I haven’t tried anything new for a while… I should really change that!
Aw, love JeninRL’s comment! Sorry you didn’t get more participation – maybe it wasn’t as popular an ingredient – I love it and actually never had it before marrying my Italian husband – so many years wasted!

I’ve never had prosciutto, but all of these recipes look fantastic!
Now see these are the recipes that make going vegetarian quite a challenge! They all look delicious. I made zucchini carrot muffins over the weekend. I’ve always done either one or the other. I never thought to mix the two (I know not exactly rocket science )! They tasted great and were quite healthy. They are gone now thanks to the husband.

Not a lot of cooking going on around here this weekend. I tried a couple more of the Weight Watchers Fresh Meals and reviewed them but that it about the only thing new on my plate!

A day late, a dollar short.
I just ate a pear, bleu cheese, spinach, and PROSCIUTTO sandwich. And it was divine. I need to work on my timeliness!

Prosciutto is one of my favorite things! Looks like I have come to the right place!
How did I miss this? My favorite use of prosciutto is as a pizza topping along with chopped mushrooms, olives, and a hard boiled egg.
This weekend I made my first buffalo chicken salad! It was my first time making anything with buffalo sauce. I wanted to participate in BSI but it’s so hard for me to find prosciutto that I didn’t bother. Sorry!
