BSI + Burgers

I’m so honored to be hosting BSI this week! For those of you that haven’t heard of it, BSI is Blogger Secret Ingredient where the host chooses an ingredient and recipes are submitted based on that ingredient. It’s a fun event that’s been going on for 106 weeks already! For the rules and to see the past ingredients and hosts you can check out Biz’s site here. In the meantime, I hope you guys will participate! For this week’s challenge, I am choosing Prosciutto! Hey, I’m Italian , what can I say?

So, guess what I did today? I ran!!!! My GYMBOSS was so happy to see me…
It was pouring rain this morning, so I headed to the treadmill instead of pavement. It was no bed of roses, I tell ya. I’m still battling fatigue, but I figure I’m gonna feel like crap either way, so I might as well push through it! I trudged along and made it to 2 miles before having to hop off to get ready for big daughter’s basketball game. Not my greatest run, but it felt good to be back to doing something! It’s amazing how much my endurance has diminished without a regular running schedule
I had just enough time to fit in a luscious breakfast before leaving – Fruit Stuffed Protein Pancakes (5 PP)…
and joe , of course (2 PP)…
Lunch was another yummy reheat – Cheesy Quinoa Burgers along with mixed greens topped with light ranch (7 PP)…
And the burger theme continued with Sliders for dinner. These little dinner rolls make great slider buns (3 buns for 4 PP)…
I pan-fried the burgers (used 96% lean ground beef) and topped them with 2 % cheese, shredded lettuce and pickles …
My plate… with green bean “fries” (10 PP)…
Oh, who am I kidding…
One leads to another leads to a serving ( 3 PP ).

My favorite burger toppings are cheddar cheese, jalapenos, and guacamole! Yum!

Ooh, I bet jalapenos would be GREAT on a burger!
Those sliders look great. LOVE LOVE LOVE Martins Potato Rolls! Oh, and I almost forgot, bought quinoa this weekend to make those burgers…but now I might be almost out of cottage cheese. Used some to make your WONDERFUL protein pancakes.
Congratulations on being chosen for BSI. Can’t say I have anything to contribute with Proscuitto as an ingredient. I know, I know, like I said I’m Irish at heart, Italian in training.
OMG, those pancakes look delicious! Now I must go out and get cottage cheese!!! (As soon as the roads are clear here)
Those pancakes look SOOOOOOOOO AMAZING. NOM! I want some! I always have pickles, ketchup, mustard, light miracle whip, lettuce, tomato and onion. I’m an all the way kinda girl. LOL!

It is crazy how fast endurance can slide. However, it is much faster to get it back than earning it the first time!
I love cheese on my burgers, especially blue cheese with cracked black pepper.
Ooh I love those little sliders! I never would have thought those rolls were so low in points and for 3 of them! Might have to check in to making them this week Cheese is my main fav on a burger, I can’t ever say I eat one without it!
Fantastic looking food! Those sliders look like fun. I have never heard of those buns, must be a regional item perhaps.
The quinoa burgers reheat nicely. My favorite burger toppings are red onion, lettuce, tomato slices and BACON!

The quinoa burgers are so good, Tami! I reheated mine in the toaster oven and they were just as delicious as the day I made them. Thanks for the recipe!

I love pickles, too!
Love those little sliders! I love to have FF mayo, onion, lettuce and tomato! And i’m on the fence with cheese – sometimes I gotta have it, other times, not so much!
How fun for the BSI! I did one with couscous and loved it! I’ve never eaten Prosciutto!

Does the recipe have to be completely original?? And do you have to have photos?
As for burger toppings, I love pickles and spicy A1 steak sauce

Karen, the recipe doesn’t have to be completely original. You can use a recipe that you’ve tweaked to make it your own. Also, no picture is necessary(although I’d love to see your yummy creation) and you can link to something you’ve made in the past. You can check out Biz’s site (link above) for all the rules and previous hosts/ingredients.
You have such a great way of food presentation and photography! Love the photos of the foods. Those pancakes look divine!
I just got back from Michigan and the popular burger topping there is Green Olive Spread(Slightly chopped Green Olives-With or without the pimento and mayonaise) It’s the first I tried it but it was really good.
