A Good Day

Happy weekend!!! Today was actually the first day in almost 3 weeks that I felt more like myself. I had a good amount of energy and felt ready to go! Hooray!
I wanted to ride this wave by heading straight to the gym for a workout. First, some fuel…
And a little breakfast – Three Cheese Souffle with Ham…
Pretty fancy for a Friday! This was inspired by the Goat Cheese-Asparagus Crustless Quiche that I made a couple weeks ago. I love that these can be made ahead and stored in the fridge for easy heat up!
Three Cheese Souffle with Ham
- 1 medium shallot
- 1 garlic clove
- 2 large eggs
- 1 1/4 cups liquid egg whites
- 1/2 cup part-skim ricotta cheese
- 2 Laughing Cow Mini Babybel Light cheese rounds
- 5 wedges Laughing Cow Light Creamy Swiss Original Flavor
- 1/2 cup extra-lean ham, diced
- Preheat oven to 425 degrees.
- In a food processor, place shallot and garlic; process until minced fine. Add cheeses and process until creamy; then add eggs and egg whites. Puree until smooth. Season with salt and pepper.
- Coat 4 ramekins (6 oz) or a 9-inch square baking dish with cooking spray. Divide ham evenly among ramekins; pour egg mixture over ham.
- Bake 25-30 minutes or until tops are light brown and egg is set.
Makes 4 servings. 5 PointsPlus per serving.
In true souffle fashion, they puff up quite nicely…
But, deflate a bit if not served immediately. Still just as fluffy inside, though…
The possibilities are endless with fillings for these. I just used what I had on hand, so feel free to substitute whatever cheeses or veggies you like. I think we can really have fun with these!
Okay, back to the gym! See how easily I get distracted by food
I hit up the elliptical for 35 sweaty minutes and felt great! I know it’s not much, but I haven’t been able to say that I felt great about a sweaty workout in a couple weeks. I’ve pushed through a few workouts, but it really was difficult. Today, my body felt stronger and not completely spent when I was done! Fingers crossed that I stay feeling this way for a while!
Lunch was Cheesy Quinoa Burgers with a side salad of mixed greens, tomatoes, croutons, olive oil and balsamic ( 8 PP)…
Friday night calls for pizza, of course! Instead of pita pizza, I branched out using this week’s BSI ingredient – prosciutto!
Prosciutto and Arugula Flatbread Pizza…
I made the flatbread using 1 cup bread flour, 1/3 cup warm water, 1/2 tsp. salt and 1 tsp. olive oil for 2 flatbreads (7 PP each). No rising needed… just mix, knead and roll…
For sauce, I pureed a roasted red pepper…
Spread on the dough…
Topped with 1 oz. lite mozzarella cheese…
Baked in a 400 degree oven for 12-14 minutes, then topped with 1 oz. prosciutto and arugula…
So good!
A side of broccoli rabe rounded out this 13 PP feast…

Soooo glad to hear you were feeling better. That’s good news. You know, I wish I LIVED in your kitchen. You always make the most delicious dishes and you ALWAYS seem to have the best ingredients in your pantry!

Glad you are feeling better! Those egg fluffs look so good. So do all the other things. When I read all these food blogs, it makes me wish there were more meals/calories in a day so I could make everything!
