Chocolate Chip Pancakes are just such a treat!
Today, were making them from STRATCH! That means no box mix!

If you need more just double or even triple the recipe!
An ingredients and equipment list are at the end of this video.
**********
In a medium bowl, whisk together:
3/4 cups of white flour
1 Tablespoons of white sugar
 teaspoons of baking powder
 teaspoon of salt
Set this bowl aside for the moment.
**********
Put 1 Tablespoons of butter in another medium bowl.
Melt the butter in the microwave. That will take about 30 seconds.
Now add:
 teaspoon of vanilla
1 Large eggand
7/8 cup of milk
Whisk these wet ingredients together.
***********
Now pour the bowl of wet ingredients into the bowl of dry ingredients.
GENTLY mix everything together until JUST combined.
*********
Preheat a large non-stick fry pan on medium heat for about 3-4 minutes.
Once the pan is hot, add 1 teaspoon of vegetable oil. Brush the oil around the pan so that it evenly coats the bottom of the pan.
Using a cup measure scoop up some batter, hold the cup about 2-3 inches from the surface of the pan, and pour the batter into the pan.
Try and make them nice and rounded.
It may take a little practice!
*************
Now for the chocolate chips.sprinkle on about a Tablespoonor more if you like!
Or you could add:
Coconut
Chopped nuts,
Raspberries
Blueberries
Chopped bananas OR
Raisins.
Let the pancakes cook until you see all little bubbles on the surface of the pancake.
When a few of the bubbles have popped it means the pancakes are ready to flip
They should be beautifully browned.
Now cook the flip side until it is nice and brown.
For the next batch, you may need to add more vegetable oil to the pan.
There are of course many different types of syrup you can pour over your pancakesmy favorite is maple syrup!
Whats yours????
