Lemon Chili Chicken with Guacamole

Another quick dinner inspired by Heather’s Dish:

spacer Lemon Chili Chicken  (adapted from Heather’s Dish)

Ingredients:

2 boneless, skinless chicken breasts

juice of two lemons

2 Tbsp olive oil

3 Tsp chili powder (mine was Mexican Hot Chili powder)

1 tsp sea salt

1/2 tsp cumin

1 tsp garlic powder

dash of cayenne pepper

sprinkle of dried cilantro

Guacamole

Directions:

  1. Combine all ingredients (except the chicken) in a medium sized bowl and whisk to combine.
  2. Rinse your chicken until cold water, and pat dry with a paper towel. Trim any extra fat and filet the chicken (slice the breast lengthwise).
  3. Add the chicken to the bowl, and marinate for at least 30 minutes.
  4. Grill until white throughout, top with guacamole and serve.

This dish got rave reviews. It’s stupid easy to make and so flavorful! It also makes me think of being on the beach, which is nice to think about when it’s 30 F outside.
