Peach Spice Muffins Recipe

October 6, 2011 By Kelly 13 Comments

I don’t know if the sales are happening everywhere, but in Texas peaches are hugely discounted right now.  I bought so many peaches on a recent trip that I didn’t know how we’d possibly be able to eat them all before they went bad.  If you’ve been reading for awhile you know that disguising healthy foods in muffins in one of the many tricks I utilize for getting my daughter to eat.  So the logical thought process when trying to use a bunch of cheap peaches was to turn them into muffins.

Peach spice muffins to be exact.   I for one, have never had a peach muffin but I had high hopes.  I had nothing to lose, right?!  But to my pleasant surprise, these peach spice muffins were really, really good.  So good that Cakes was clamoring for them as soon as they were out of the oven.  I only wish that I would have doubled the recipe because these muffins were gone in two days.  Seriously.  That good.

These sound so good! The Boy is obsessed with muffins right now. I’ve been making a lot of pumpkin this recipe might be a nice switch for him. Since I use mini-muffin tins for him, I’ll probably puree the peaches when I make these.
