It’s not a secret that getting kids to eat their vegetables isn’t easy. We offer our babies veggies first, because they are predisposed to sweet, and even the vegetable purees that they tend to enjoy are sweet vegetables like carrots, sweet potatoes and corn. But the healthiest diet includes foods across the color spectrum, and getting kids to eat those green vegetables isn’t always easy. Heck — it’s hard to get many adults to move beyond potatoes!

Dads, eating your veggies is so very important to the healthy development of our children and, while we all know that, sometimes you don’t even feel like going through the hassle of trying to get them to eat those leafy greens. It’s sooo much easier to just order a pizza and tell yourself, “It has tomato sauce… that’s a veggie right? So, they’re getting their vegetables!” Yeah, been there. Done that. The truth though is that like many things, the key to getting children to eat vegetables is to set the example (something I was terrible at doing when my children were knee high to a turnip).

So…have I been able to get my kids to eat their vegetables? Yes. Have I been able to get them to love eating their vegetables? Kind of. Sort of. Maybe. Okay…no. One came into the world loving them and the other one tolerates eating them. What I have been able to do though is to make eating vegetables more enjoyable for my little one. As Sean says, “I used to be a picky eater, but I’m not anymore.” He is mistaken. While he’s definitely not as picky, he is still very particular. That is fine with me though, because I’m pretty particular myself.

My 9- and 7-year-old daughters will proudly tell anyone who will listen how much they love Brussels sprouts, spinach, lima beans, broccoli, and salad—all manner of vegetables that conventional wisdom would have us believe all kids hate. I often wonder if kids are inadvertently taught to hate vegetables because we’ve all been conditioned to believe that that’s supposed to the case. With my own family, my children have the benefit of two parents who love all manner of veggies, and I know it’s at least partly because my husband and I were raised by parents who love veggies as well.

My five-year-old Halloween had all the ingredients to be the best ever. At the time, however, it felt like the worst. And in the end, it probably was one of the top “teachable” moments of my childhood. This was the Halloween my mom made me the costume of all costumes. I was a bunny. (And before you start making jokes, let me remind you that Bugs Bunny was very popular back then!)
