Snippet: Redondo Beach

Taken August 2011
This past weekend was a jam packed HCMC tourist affair with family friends visiting from Federal Way, WA. Who would have thought when we first met 20 plus years ago, we would be spending a weekend in Vietnam out of all places?! Minus my parents, their kids and my younger brother, we reminisced about the many camping trips we took around the Pacific Northwest and wishing we still lived in close proximity of one another. The road from their house was towards the beginning of the Redondo beach strip and the road from my house intersected at the middle of the strip.
I shared a glimpse of my life in Vietnam through Vietnamese food and the usual tourist spots. Mr. Kim was adventurous and cruised the Saigon streets with Si on motorbike after a few Saigon Special beers. And after 2.5 years of living in Vietnam, I finally went to the very famous Cu Chi Tunnels with the Kims. Our guide was a walking encyclopedia (in a good way) who gave a memorable history lesson. Spending time with the Kims, as they get their own firsthand experience of Vietnam, only comes to show that there are still a lot of things to experience within the proximity of Ho Chi Minh City. It never gets boring.

Sometimes when life gets super busy with limited time in the kitchen, I look to quick and simple recipes. These brown butter cornflake treats are made the same way as rice crispy treats with a couple of additional ingredients to make it a deliciously addictive snack or dessert. The treats have the perfect amount of [...]

Greetings from Krabi, Thailand! We are having an amazing time island hopping, walking up 1237 stairs to the tiger cave temple, and cruising by motorbike. Next stop will be Phuket for a couple of days before we head back to the grind. We can totally see why people come back to Thailand for vacation. Southern [...]
Seoul – Insadong
on January 19, 2012 in E Asian, South Korea
I honestly don’t remember the last time I visited Insadong. Even when I studied in Seoul one summer during my university years, the closest I got to Insadong was Myeongdong. Lets just say site seeing was not really one of my priorities then. Insadong was not really what I expected to be. For some reason [...]

A trip to Vietnam wouldn’t be complete without experiencing some delicious seafood. Let me introduce you to Hong Hai Seafood restaurant. If you are looking for fabulous seafood without the beach view and within the cityscape of Ho Chi Minh City, this is your place. The atmosphere is casual and perfect for big groups. The menu has Vietnamese and [...]
