Smashed Potatoes

Smashed potatoes: Cheap and delicious for hungry families
This recipe is thanks to Jamie Oliver's 30 minute meals show.

It has been a godsend on those nights you want to provide something cheaply and quickly for a hungry horde.

While Jamie used sweet potatoes, on this night I used left over normal potatoes, some home grown spring onion, ham and chilli.

So peel and cut up as many potatoes as you need for the number you are feeding. Place in a bowl with a half cut lemon.

Microwave until cooked, take out the lemon and smash the potato roughly with a fork.

On a bread board chop finely one chilli, salt and pepper and cover with olive oil.

Place the potatoes and chopped up ham on the bread board and mix in.

Sprinkle with fresh coriander (or dried coriander) and feta cheese.

Either serve in separate bowls or straight from the bread board where people can serve themselves.

The dish can be a side or a main depending on your mood.

Green Eggs and Ham

Green eggs and ham with Christmas leftovers
This dish came about through a combination of a love for Dr Seuss and the need to use up Christmas leftover ham.

Oh, and the fact that my vege garden is 'chockers' with silverbeet and spring onions.

I simply fried slices of ham and eggs.

At the same time I wilted the sliced up silver beet and chopped spring onions.

When all is done, place the greens on the egg and the ham beside.

Then serve up with some of that leftover potato salad.

Nutty Beef Satay

A lovely combination of flavours in the nutty beef satay.
A great blend of flavours and the sauce goes great with simple foods like boiled potatoes as well as beef.

Ingredients
750g piece rump steak
1/2 C crunchy peanut butter
1 small chicken stock cube, crumbled
1 C water
2 Tbs honey
1 Tbs dark soy sauce
1 Tbs lime juice
2 tsp curry powder
1 tsp grated fresh ginger
1 tsp ground cumin
1 tsp ground coriander

Method
1. Cut steak into 2cm cubes and thread onto satay skewers.
2. Place skewers in a single layer in shallow dish.
3. Combine remaining ingredients in a bowl and pour over satay sticks, cover, refrigerate for several hours or overnight.
4. Drain satay sticks and serve marinade.
5. Bring marinade to boil in pan, and boil uncovered for about 10 mins stirring frequently or until thickened.
6. Grill satay sticks until beef is tender. Serve with sauce and vegetables.

Home made take away, cheap and fun.
Ok, so the scene was a Saturday night at home with my two boys, 9 and 6 while hubby was at work at the restaurant.

We wanted to watch a good family movie on TV and I didn't feel like cooking too much, so we raided the freezer and fridge to find out what we could have without too much effort

Marsala Chicken

Beautiful flavours in marsala chicken..or my case sherry chicken
An amazing concoction of flavours in this dish.

I didn't have any marsala so used sherry instead and it still tasted yummy. This dish has raisins in it which I didn't include as I'm not a 'dried fruit in savoury dishes' fan

Guy Grossi's lasagne recipe is definitely worth a try for winter
There are so many recipes out there for this hearty, warming Italian pasta dish but I came across Guy Grossi's version and I gotta say ......woo hoo!!

I used a full-bodied shiraz (which I had to sample in a lovely big wine glass while cooking) in the meat sauce
