The BEST Gluten Free Banana Bread Muffins

I recently posted about being blessed with an entire BOX of bananas and what we did to put them up, here. I’ve had folks asking for the heavenly Gluten Free Banana Bread Muffin recipe we used, so I thought I’d just post it and share!

Heavenly Gluten Free Banana Bread Muffins

4 TB Butter, melted

1/2 C Sugar or Honey

2 eggs

1 very ripe banana

1 3/4 C Pamela’s Baking & Pancake Mix

1/4 t salt

1/2 t vanilla

Beat together the melted butter, sugar (or honey), eggs and banana. Add remaining ingredients, and mix together.  Pour into (greased or papered) muffin tins (we used mini muffin tins) and ladle in your muffin mix to about the halfway point. Bake at 350 for about 10-15 minutes for MINI muffins, about 25 minutes for full size muffins and you can use this for Banana BREAD, use mini loaf pans– full sized tend to have to be baked so long that it dries this great moist bread right out.  Watch carefully–do not OVER bake. These make deliciously moist yummy muffins! THE BEST GLUTEN FREE muffins we’ve ever had — the whole family (GF or not) LOVED them! Make LOTS. : D

What to do with a whole box of bananas?!

Sooo…………We were blessed with a WHOLE BOX FULL of Bananas recently….. free….no charge….’take ‘em’!

So….we made Banana bread, lots and lots of Banana Bread………

We love Banana Bread (good thing, too!) and so we made up a ton of it (17 loaves, last count…..before I quit counting), we froze it up–and will use it for quick breakfasts, snacks, it is perfect for Sabbath morning breakfast (no cooking involved!) and the children think it is a dessert like treat, too–it’s a win – win to have Banana Bread stocked in our freezer !

Wrap tightly in Saran Wrap….

Then a layer of heavy duty foil………..

Label…………..

Toss in the pile, to get stocked into the freezer!

We made loaves baked in loaf pans, cake pans….any pan we could find!

For our next round, we made Gluten Free Banana Muffins!

Last but not least……….we pulled out the big gun……..I just couldn’t let any of these Bananas go to waste………so enter…….the DEHYDRATOR!

So, I now have a full dehydrator of Banana chips drying, which will be perfect for making for Gluten Free Banana Muffins whenever my GF Girl would like ‘em! I’ll put them in a canning jar, seal the lid on w/my Food Saver and put them on the Pantry shelf for the proverbial ‘rainy day’ : D

That is how we use up a whole box of bananas ’round our homestead, simple……but that’s how we like it.

Blessings from the Garden!

We though we’d go out and ‘check on’ the spuds and see how they were growing…and we are so blessed by the results!  We just dug up a small amount, but these fresh, au naturel, God grown spuds are so heavenly….

I made up a batch of chicken vegetable soup yesterday to can and tossed in a bunch of these, as well as cooked some up last night for supper as fried spuds….they are so very delicious. What’s being harvested in your garden?

We love potatoes around here so these bring big smiles to this Momma’s face and a thankful heart– knowing my family is eating something from the garden, that they love, and that is grown by His hand. Praise Yah!

Putting Up Green Peppers

We were blessed with a bunch of Green Peppers last week (which is GREAT since the deer or turkeys ate all ours in the garden!)…these are really easy to put up!

Wash, cut up in thin pieces, and lay out in the dehydrator

I left mine in about 10 hours and had 9 packed trays of them

All said and done they fit into 2 quart canning jars.

I love dehydrating– preserves and keeps your food with no grid needed, and so compact & easy to store!

Great way to preserve the harvest & so very simple to do!

Getting Organized: Pantry

In my quest to go through our schouse and reorganize before Fall hits us, we recently went thru and organized our Pantry; well…..REorganized I should say.  We’d needed to move some shelving around, and that meant a bit of redesigning the layout of the area–so needless to say– it became quite a mess.

So, we unloaded the shelving that needed moved……..and cleared a path through the pantry, so the work could get done and set at it. A couple hours later, my husband had the shelf moved, re-anchored and I was reorganizing! Yay!  What made this task less monumental was that things were for the most part, already packed up. It was a matter of putting things where we now wanted them. Easy enough.

I use canning jars (garage sales)  for dried herbs, baking items, premixed meals and dehydrated goodies, things I buy in bulk and so much more–they are so versatile! I also use (free) food grade bakery buckets too, which makes storing flours, cornmeal, etc. simple! I use gamma seal lids (you can find them for around $5.00) they make using your buckets a breeze!

Some simple shelves in a coat closet, to a small bedroom, or a basement space; the putting together of a pantry can be made simple! Using free or super cheap items for storage solutions (canning jars, bakery buckets, etc.) and for shelving, that could be an old bookcase, some plywood and #10 cans filled with rocks or sand–the options are endless and can be done on the cheap and so worthwhile!

Here are some other storage ideas and solutions to reuse and repurpose those #10 cans, I thought this was a great post!

If you haven’t noticed….prices for EVERYTHING are on the rise and stocking up when things are on sale is only prudent and wise; having a designated spot to house it, in an organized fashion, is a blessing.

Chicken & Dumplings

This is a classic and simple “comfort food” that is a huge favorite around our house. Chicken & Dumplings. Not something people usually have in the summer, but in Alaska, with occasional high’s of only the 50′s, you can even make this in July!
