I’m Jennifer Cordova, creator of How to Peel an Onion. I’m passionate about making my food from scratch – I think it’s healthier and more delicious than the manufactured foods our culture promotes. My family’s health is really important to me, and I’ve found that cutting out processed foods and focusing on whole unadulterated foods, prepared in my own kitchen is key to creating a healthy foundation for me, my husband and my children. Sure, it takes more time and effort, but the benefits we reap in terms of health, taste and enjoyment are well worth it!

In addition to how my food is prepared, I feel strongly about how my food is consumed. I don’t view food soley as a form of sustenance – the experience surrounding it goes hand in hand with it’s preparation and nutritional value – they all work together to create an enjoyable and healthy life! This means that I’m not into eating standing up or on the go; taking the time to sit down, preferably with others, makes meals more nourishing and more fun!

I love including my son in lots of the food preparation, which is why you’ll find little notes on many recipes for your budding chefs. While I don’t always have time to get him working in the kitchen with me, I truly believe that many valuable skills and experiences are acquired by children when they are with their parents in the kitchen. I grew up sitting in the kitchen chatting with my mother as she prepared our meals – I learned so much just by watching and listening, and now my son is doing the same with me! Spending time in the kitchen together is a great opportunity to bond with your children – it’s a priceless time to pass on family stories, useful culinary information and a life-long love for food!

Most of my posts are sprinkled with many of my research finds and opinions on health and nutrition. However, I am not a health professional – these are all my opinions, and should never be substituted for your own information gathering or your physician’s advice! Be prepared – most, if not all, of my opinions on nutrition go completely against the grain of popular opinion. I love eggs, butter, raw milk, heavy cream, meat, salt and lots of other foods that are generally frowned upon; I feel that these unadulterated foods, when sustainably raised are the best source of nourishment for the human body. Oh, and they’re absolutely delicious…
