Brisket Beef Jerky

This brisket beef jerky turned out great!  I had never made beef jerky before, but since I just got a Nesco 700-Watt Food Dehydratorspacer  I couldn't wait to try making it myself.  Store bought beef jerky typically contains nitrates or other chemicals and gives the kids stomach aches.  They love it, but then regret eating it later. 

The whole family loved this jerky!!!  I only got a few pieces before they ate it all in less than 24 hours!

Next time, I am doubling the recipe and hiding some for myself.

It is not hard to make beef jerky and I think there are many different flavors to try.  This one has an Asian flair to it, because of the soy sauce and terriyaki sauce


Ingredients:
  • 2 lbs grass fed beef brisket
  • 1/4 cup naturally fermented soy sauce
  • 1/4 cup Worcestershire sauce (Annie's makes a pretty good version)
  • 1/4 cup terriyaki sauce
  • 1 tsp maple syrup
  • 1 tsp garlic powder
  • 1 tsp onion powder

Trim the brisket of any fat.  Slice with the grain as thinly as possible.  The beef slices easily if you have placed in the freezer for 30 - 60 minutes prior to slicing.  This tip really does make a difference for ease in slicing.

Mix all the other ingredients in a bowl.  Place the sliced beef into a Ziploc bag and pour the marinade into the bag.  Mix the beef around in the bag to cover with the sauce.  Marinate for 24 hours.

Place the slices of marinated beef onto the dehydrator trays so that they are not touching each other.  Turn the temperature to 160 degrees and dehydrate for 4 hours. 

Test for doneness by slicing into a piece to make sure it is cooked. through.  When I checked mine at 4 hours it was done.  If your slices are on the thick side, they could take a bit longer. 

Wrap the slices in a paper towel to absorb any remaining juices or fat.  Store in a Ziploc bag or other sealed container.  Refrigerate, if you plan on keeping for months.  Since we ate ours in such a short time, that was quite unnecessary.  Enjoy!
