Spicy Baked Chicken Strips

Spiced up chicken strips. Great for that party or just dinner. I used chicken tenders but just cut some skinless boneless chicken breasts into strips if you want. Another 30 minute recipe.

After reading 20 recipes I decided to start with my own recipe for Spicy Oven Fried Chicken. It worked just fine.

Really good. You can cook up as much as you want for a party or a few for a meal.

Notes: As written, the recipe is about a 6/10 hot. I did increase the cayenne by a 1/4 tsp. and it was a strong 8/10. If your cooking for kiddies or the heat adverse, eliminate the cayenne. To keep the fat down, I used two egg whites but you could use one egg with the yoke. Finally ,in the original recipe the coating can be a little dry. I gave them a light spray with PAM... problem solved.

Preheat oven to 400 convection. Prep a baking tray by lining with aluminum foil, fit with a rake and spray with PAM.

 Trim and rinse 1 1/2 pounds of chicken tenders. Or trim and slice 2 skinless boneless chicken breasts into 1/2 inch thick stripes.

 Dry the chicken. DO NOT SKIP THIS STEP.

 Create a dredge line with 1/4 cup flour in tray #1, 2 egg whites or one egg wiped with 1 T water in tray #2, and 1/4 cup flour, 1/4 cup Panko bread crumbs, 1 t paprika, 1/2 t garlic powder, 1/2 t each salt and pepper and lastly 1/4 t cayenne pepper (adjust for taste). Roll the chicken in tray one and shake dry.

 Dip in the egg wash and shake off excess.

 Roll in the final tray

 Place on prepared tray. Give them a light spray of PAM.

Cook until 165 in thickest part. 18-20 minutes.

  • 1 1/2 pounds Chicken tenders or Skinless breasts cut into strips
  • 2 egg whites or 1 whole egg
  • 1/2 cup AP flour
  • 1/4 cup panko bread crumbs
  • 1/2 t paprika
  • 1/2 t garlic powder
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 t cayenne
  • PAM
Instructions

Healthy Crockpot White Bean Chili Spiced Up

You could say a lot about this chili. You could call it healthy, low fat, and low glycemic. I'm will just call it excellent.

I have always loved white bean in soups or chili and slow cooker chili fits my current life style.  It is just the right thing. One of my favorite chilies uses pepper jack cheese and salsa for spicing. I want to control the spicing and get the cheese out of the recipe.

I really like this. Spiced just right. The chicken was tender and infused with spice.

Notes: This is about a 5/10 on the heat-o-meter. Add more spice is you want hot. If you have precooked chicken then about 3 cups, add all the spices and chicken broth from part one and start at part two.

Part one: 3 medium size skinless boneless chicken breast trimmed, 1 can chicken broth, one medium onion chopped, 1 bay leaf, 1 T chili powder, 1/2 t each salt, pepper, cumin, and garlic powder.

Cook on high for 4 hours. Remove and discard bay leaf. Pull out chicken and shred. Place back in crockpot with the braising liquid.

Part 2: Add 1 10oz can Ro-tel tomatoes, 1 4oz can green chilies, 48 oz precooked great northern beans, 1 jalapeno diced small, 4 t chili powder, 1 t cumin, and 1/2 t salt.

 Cook on high for 4 more hours.
