Smashed potatoes: Cheap and delicious for hungry families
It has been a godsend on those nights you want to provide something cheaply and quickly for a hungry horde. While Jamie used sweet potatoes, on this night I used left over normal potatoes, some home grown spring onion, ham and chilli. So peel and cut up as many potatoes as you need for the number you are feeding. Place in a bowl with a half cut lemon. Microwave until cooked, take out the lemon and smash the potato roughly with a fork. On a bread board chop finely one chilli, salt and pepper and cover with olive oil. Place the potatoes and chopped up ham on the bread board and mix in. Sprinkle with fresh coriander (or dried coriander) and feta cheese. Either serve in separate bowls or straight from the bread board where people can serve themselves. The dish can be a side or a main depending on your mood.
