White Chocolate-Dipped Red Velvet Cookies

Monday morning I woke up and something was bothering me. I couldn’t shake the feeling. I had two great recipes that I wanted to share for Sweet Tooth Friday, both appropriate for Valentine’s day and I just couldn’t decide which would be the one.
I obsessed about it all morning.
I considered calling Hubs who was away for work to help me decide.
Then I decided that would make me sound like a crazy person.
Instead, I asked Facebook. Because that’s what you do, when you can’t decide. Right?
And so, this recipe is for all of you.
You know what? I almost regretted taking your advice. Because as I was slicing up the chilled dough I was convinced that these cookies were going to be a disaster.
You see, the dough, it was crumbling as I sliced it. I used my very sharpest knife, I carefully measured so I was cutting at the right thickness. And still, it was crumbling. Not every slice, but enough to make me want to throw my hands up in the air, blame Facebook, and mourn over the time and butter I had wasted.
Instead, I “glued” the dough back together by squishing and smoothing until it resembled properly sliced cookie dough. Then I baked it. And before my very eyes, something amazing happened. The dough, as crumbly as it was, turned into these gorgeous, bright red cookies.

Then I did what any normal person would do, I danced around the kitchen. Because it’s completely normal to break out in dance over cookies.
After I caught my breath, I dipped these babies in white chocolate. Topped a few with sprinkles, tasted a few…ahem…and did another happy dance.
I have a confession to make though. I used one of my secret cookie weapons: cake mix. These aren’t 100% from scratch. If you have ever made cookies with cake mix, well, then you understand. If you haven’t, you simply must. And that’s an order.
Prep Time: 1 hour, 10 minutes
Cook Time: 10 minutes
Total Time: 1 hour, 20 minutes
Yield: 36 cookies
Easy red velvet cookies dipped in sweet white chocolate, using my secret cookie weapon: cake mix.
Ingredients
- 1/2 cup butter, melted and cooled
- 1 box Red Velvet Cake Mix
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips
- 2 tablespoons shortening
Instructions
- In a medium sized bowl combined the metled and cool butter, red velvet cake mix, egg and vanilla extract. Stir with a wooden spoon to combine, then use your hands to get everything incorporated evenly. The dough is very thick.
- Roll into a 14 inch log, wrap in wax paper and plastic wrap. Chill in the fridge for at least 1 hour, or overnight.
- Preheat oven to 350.
- Using a very sharp knife, slice the dough into 1/4"-thick slices, placing them 2" apart on a cookie sheet lined with silicone liners, parchment paper or lightly sprayed with nonstick spray.
- Bake for 8-10 minutes or until set. Cool slightly on the pans, then transfer to a wire rack to cool completely.
- Place the white chocolate chips and shortening in a microwave-safe bowl. Microwave on high for 30 seconds. Stir, then continue to microwave and stir every 30 seconds until the chocolate is melted. It's very important to stir well and often, so the chocolate doesn't end up over cooked.
- Dip half of each cookie in the melted chocolate, let any extra drip off. Dip into your favorite sprinkles. Place on was paper or parchment paper to set.
Notes
The chilled dough is a little crumbly when you slice into it. You can reshape the slices and the will still bake up beautifully.
You can also chill the dough without rolling it into a log. Drop the dough in 2-inch balls, flattening them slightly, then bake as directed.
