Marbled Cheesecake Brownies

Losses are hard. Kind of like when I fell off the monkey bars in front of everyone in my second grade class. Or when you accidentally run a red light in your drivers test — oops. Or when the Patriots lose to a New York team. Yuck.

Well, this is why god invented chocolate. And vanilla. And cream cheese.

spacer I use these things to drown my sorrows. Luckily for me, it works really well. So this is what I do: I melt chocolate with a stick of butter, mix in som vanilla and flour and some eggs. I put it in a greased square pan. See above. Then I lick the first bowl clean.

Then, I take a separate bowl, and fill it with cream cheese – one of those beautiful things in life that are high in fat and taste good on just about everything – some sugar and other deliciousness.

spacer This then gets layered upon the brownie mix. But wait, it gets even better….

spacer By taking a simple kitchen tool, the butter knife, and getting all sorts of creative on the mounds of cream cheesy goodness, a beautiful swirl of artistic deliciousness forms.

spacer But just in case your head is still hanging a little it, pile on some mini chocolate chips. Because why not? I love chocolate, and more chocolate is never a bad thing.

spacer So, while you’re on your tenth tissue watching the Giants accept the Vince Lombardi on mute, these brownies will bake up in about 35 minutes. Then you can cut yourself off a nice slice. Or just the rest of the pan.

Marbled Cheesecake Brownies
Inspired from Smitten Kitchen

Ingredients

Brownie batter
1 stick of unsalted butter, cut into pieces
3 ounces semisweet chocolate, chopped or in chips
3/4 cup of sugar
2 large eggs
1/2 teaspoon of pure vanilla extract
2/3 cup of all-purpose flour

Cheesecake batter
8 ounces of cream cheese, well softened
1/3 cup of sugar
1 large egg yolk
1/4 teaspoon of pure vanilla extract

Plus
1/2 cup of semisweet chocolate chips

Instructions

Make brownie batter: Put oven rack in middle position and preheat oven to 350 degrees. Grease an 8-inch square baking pan. Heat butter and chocolate together. Whisk in sugar, eggs, vanilla, and a pinch of salt until well combined. Whisk in flour until just combined and spread in baking pan.

Make cheesecake batter: Whisk together cheesecake batter ingredients in a small bowl until smooth. Dollop over brownie batter, then swirl in with a knife or spatula.

Sprinkle chocolate chips over cheesecake/brownie batter swirl.

Bake brownies: Bake until edges are slightly puffed and center is just set, about 35 minutes. Serve warm or at room temperature.
