One of my absolute favorite blogs is spabettie.com. Kristina makes the most creative dishes and photographs them beautifully. I was really pumped when she said she would take part in the Mighty Vegan Mardi Gras. Here is her recipe for Jambalaya which looks fantastic and I can’t wait to try it!  Continue reading →

Loss

by mightyvegan on February 5, 2012 in News with 6 Comments

Dear readers,
Sorry for the slow posting over the last few days. My mother-in-law passed away unexpectedly this past Thursday. She was a lovely lady, full of life and energy, and had such a genuine love of people. We are all in shock. She will be sorely missed by so many.

One bright spot, she and my father in law had just celebrated their 50th wedding anniversary! 50 years together and their love and respect for each other was still going strong. This week is her funeral and my family will be traveling, so posting will be a bit sporadic for the next few days.

Something to get excited about…Monday’s post will be from spabettie. My favorite blogger and she’s got a nice dish in store to celebrate a Mighty Vegan Mardi Gras so please check back!

Should Sugar be Taxed?

by mightyvegan on February 2, 2012 in News with No comments

Could there soon be a tax on your Fruit Loops? If one group of researchers from the University of California, San Francisco, gets their way, then yes!

According to ABC news, in an editorial published today in the journal Nature, the UCSF doctors, Robert Lustig, Laura Schmidt and Claire Brindis, said the ballooning rates — and costs —  of obesity, diabetes and other diseases, mean it’s time for regulators to lump sugar into the same category as booze and cigarettes and put similar restrictions on its sale and availability.

The authors say the government should consider taxing any processed foods that have added sugar, including soda, juice, chocolate milk and sugared cereal.

While I do believe sugar is plenty bad for you, (even though I have a mouthful of sweet teeth). I’m not ready to see a tax on it. I think as a nation it’s a matter of more responsible food producers, education on the consumers part and making a huge effort to do something physical everyday. In other words, it’s more than just sugar causing our problem of obesity! What do you think, should there be a tax on sugary foods?

Vegan Tofu Po-boy

by mightyvegan on February 1, 2012 in dinner, entrees, lunch with 2 Comments

What better way to kick off our Mighty Vegan Mardi Gras than with a po boy! I grew up eating these. Only back then they were filled with fried shrimp, catfish or oysters. Po boys are a staple in most New Orleans restaurants. They are basically like a sub usually filled with meat or fried seafood. What differentiates them is the Continue reading →
