Fun With Food Friday – Chicken Enchiladas

I’m participating in Fun With Food Friday again! This recipe is for Chicken Enchiladas, which was a huge hit with the whole family. I would definitely make this again. It was so simple to make, and making six people happy with one meal is no small feat!

Chicken Enchiladas
Ingredients
- One family size can Cream of Chicken
- One medium tub of Sour Cream
- One small can of diced green chiles
- 3-4 Chicken Breasts
- Your choice of grated cheese
- 2 dozen corn tortillas
Instructions
- Boil and shred chicken.
- Heat soup, sour cream and green chiles in a saucepan until hot.
- Heat tortillas in microwave until warm (so they won't tear when rolling)
- Preheat oven to 350F.
- Spoon a small amount of soup mixture onto a tortilla. Top with some shredded chicken and cheese and roll.
- Line them all up in a baking pan and spread any remaining soup mixture on top. Sprinkle any remaining cheese on top. Bake until cheese is melted through!
Notes
MAKE SURE to heat your tortillas until they are very soft, or else they will tear horribly!

This sounds yummy what temp. do I heat it up at an how long?

Sorry about that, I put them in at 350F (original recipe didn’t specify, but you just want them in until the cheese is all the way melted). I fixed the recipe too.
